This is one of the few songs I know of that uses metric ambiguity really well. The rhythm of the notes on the lead in the beginning sounds like it changes when the drums kick in but from what I can tell the rhythm actually never changes
Yep, in the intro it sounds like the beginning note of every chord change precedes each measure by an eighth, until the drums come in and fix the beginning of those notes to the start of each measure instead, essentially breaking the beat by that eighth as it happens and permanently moving the phase of the melody there.
Another interesting example of metric ambiguity is _Outlands_ by Daft Punk from the _Tron: Legacy_ soundtrack, where it's not easy to place exactly where the beat is when all you hear is the strings in the beginning (it can be either at the beginning or the end of the repeating three-note motif), but becomes more fixed as more instruments, particularly the low-sounding brass, come in and make it clear that it's at the beginning of the motif.
Another great example is from Holst's composition _Jupiter, Bringer of Jollity_ from his _The Planets_ suite, right after the cheerful waltzing part as it transitions back from 3/4 to the more mystical and dark part in 2/4, and a brass fanfare is heard playing two quarters followed by an eighth and a quarter, followed by a small barrage of four sixteenths, a dotted eighth, and another sixteenth before concluding with two eights, an eighth rest, and another eighth, before finishing with a long sustained note that introduces the part. If you count it out, you realize that this is an eighth short, and that the natural break before the barrage would have to either include that eighth as a rest, or have the quarter dotted, but this isn't the case, what's actually happened, as you can clearly see when looking at the score, is that Holst actually had the entire phrase come after a rest of an eighth in the very beginning, which is very difficult to detect since there's no other melody being played at that time, and few people are accurately keeping count from the time the preceding part ends, so instead the break of an eighth is registered right before the barrage, making for a somewhat more aggressive fanfare, which is likely what Holst wanted to achieve.
Beethoven does something very similar in the third movement of his _Sonata Quasi Una Fantasia_ (or the _Moonlight Sonata_ as it's popularly known, although he certainly never gave it any such name), where he first plays a motif of a quarter and a quarter rest twice, succeeded by four quarters in succession, then very shortly afterwards he repeats the motif, except now the first two quarters have rests before them instead of after them, and the succeeding four quarters are all offset by an eighth, once again making it sound like the beat "breaks" (hence the more modern term "breakbeat") and that the following part comes an eighth before it "should", since it's difficult to catch when there's no rhythmically unambiguous instrumentation being played simultaneously (in this case Beethoven deliberately accompanies the motif with a delirious motif running up and down that is itself metrically ambiguous, having a possible beginning at both of the ambiguous points of interest).
I'm 16 and own a fc3s rx7 because of this game. Other 5 year olds played on the playgrounds, I was tuning my engine and suspension on an rx7 on gran turismo 1 :). One of the best games of all time.

The nostalgia is just unbearable.... As a kid all I ever did was play Gran Turismo 1 on my dad's playstation. I remember spending long grueling hours trying to pass the license tests in order to progress through simulation mode. Sometimes I didn't have enough credits to buy a car, so I would just look through all the cars at the dealerships while listening to the badass music in GT1. You know, even dreaming of owning one of these beautiful machines someday.
