I made mine with the store bought rectangular sheets that are never as fresh and nice as I see in these videos. upped the onion, added some peppers and garlic and then finished the recipe cooking it in a medium deep-dish pizza pan with a vented bottom. It cooked beautifully, crunchy but still moist inside. Easy to cut and serve. I tried it plain out of the oven, then reheated with some sour-cream and Tabasco. Filo changes drastically from fresh out of the oven to being reheated in a microwave and I like them all. I will cut the oil WAY down next time I make it. If you make the emulsion right it would only need 1/8 cup oil and will still be killer. Ghee would be even better but... I try and keep calories as low as possible and still be able to enjoy the finished product. This recipe - prntscr.com/m1qv72 , came to 1683 total calories or 280 calories per serving when cut into 6 pieces. This procedure would work with ANY ingredients. It's simple, tasty, good looking can go sweet or savory. The filo isn't good for you at all, too many carbs, and everyone over oils the crap out of it. But it can be used sparingly now and then like almost any food.
