Man, you really won the biome lottery with this seed. Reminds me a lot of Beta's crazy world generation, especially in that savanna area where you were singing while looking for llamas. Also, accurate spiders would severely outclass baby zombies in the annoying & dangerous department lol
The Minecraft squid really is strange. My biggest problem is of course that they don't drop calamari, but there's also as you said they only have 8 tentacles. But the thing is, you can't call something that dumb an octopus, octopi are smart. And blue? Most squids aren't blue. As for size, squids in real life can range from an inch to 15 meters.
The squid has been an enigma for thirteen years both in their appearance, and their weird behavior. I'm actually very surprised they've lasted as long as they did and weren't replaced with something else in the oceans update like the Zombie Pigmen were with the nether update. I put it down to the horrifying idea of trying to actually implement a decent system for tentacles into minecraft.

Instead of having squids be their normal size, add in the biggest one (Colossal squid) with a chance to randomly spawn in. Or if you want to know where each squid is at, make them all that size

Some of the mobs when scaled would be within one dimension's range but too large or too small than the other, like the cat. I don't remember off the top of my head if that's true for these two mobs, but I think it is.
