Yes, the sweet and acidic pineapple with the salty bacon was pretty amazing. I also have videos where I wrapped dill.pockle spears with bacon and a desert idea of wrapping Oreos with bacon. All were wonderful!

This was a rub called Tribley's out of Ferndale WA. I use a lot of Mest Church rubs that are widely distributed through the USA. Might try their Honey Hog!
Hey Julie... I bet you could set your oven to 350 to cook off the bacon. Put the bacon wrapped pineapple on a cookie sheet with parchment paper or a baking rack. Put a few drops of liquid smoke in some BBQ sauce and paint on with a pastry brush a few minutes before the bacon is fully cooked. Good luck!

Since i am all about using smokers and outdoor cooking, I am going to be biased in the best technique :-) The time is based on the thickness of the bacon... you are cooking to the doneness of the bacon. As far as the pineapple, putting it on the grill caramelized the sugars, gives a char and adds to the taste.
If you have a large dutch oven. Tie the slices of p-apple with string that has been soaking n water. Make you a small fire n put hot coals n 2 ur dutch oven. Tie the p-apple to the lid inside. Put lid back on. Then put it n the oven OR out on the porch. Let it smoke for a lil while.however long ur coals last. Now I use hardwood like apple natural wood chunk coal I know, some say use liquid smoke....itz ok, itz possible.. but I like the real deal. My personal opinion of course 😊

I will put these on my smoker with a great rub that I make I will also rub my bacon and sugar it too smoke it for 2 hours and if needed hit it on the grill for a few minutes....

You are a very asute observer! If I remember right, this was batch #2 of the pineapple. 1st batch I used too much brown sugar, and it made a sticky carmelization on my tongs. Take #2 was what I used in the video a few minutes later with the same tongs. Hope your guests love this appetizer as much as mine! I saw smoke in the name of the grill, but never saw any smoke what so ever in the cooking chamber. Heard the gas jets running though. Where's the smoke?
Hey jeff95050, thanks for watching! To answer your question... @ just after 10 minutes into the video, I put the grilled pineapple wrapped in bacon onto a Camp Chef Smoke Pro pellet smoker grill. There is a fan that runs on the pellet grill, which you might be hearing and thinking they are gas jets. I can assure you the smoke taste was there and they are wonderful!

I do the wrapper with uncooked apple and bacon between meat, onion on skewer. This look so good I will try them next time I grill.

My dad used to make chicken liver pate. Personally was never really a fan, but with enough bacon I could eat anything!

I would recommend the pineapple round sauces vs chunks. You need bigger pieces.

I do a similar dish. I've never felt the need for the brown sugar, the pineapple is sweet enough.
Agree, if I don't let the pineapple ripen long enough sometimes I need to boost with brown sugar
Interesting, that bbq sauce looks a bit like teriyaki
It really tastes like a blend of teriyaki and BBQ. I first tasted it as a Costco sample and had to buy a bottle. Have really enjoyed it!

Smoke was in the pellet grill when bacon was wrapped around the pineapple.
Some people are creative cooks,but their editing skills are limited. This video could have been maybe two minutes.
