This is a channel to share my love of BBQ and recipes, tips, techniques, reviews & some of my experiences rebuilding pellet grills and gas grills that others have neglected or "left for dead".
My childhood was spent around the small town family meat market operated by my dad & two of his brothers. This fostered an appreciation for meat and a fondness for that soothing smell of smoked meats. The "smokehouse" in the back of the meat market was a magical place for me as this was the real transformation happened to the dried beef, jerky, and ring bologna... a family secret recipe!
I currently use Traeger, Green Mountain & Yoder pellet grills, as well as Weber Smokey Mountain smokers.
Am also a fan of my Blackstone flat top and Weber gas grill & Smoke Chief pellet-based cold smoke generator.
I welcome your feedback, discussion, and thoughts... as well as "Likes" to my videos.

Here is a twist on cooking up a pork belly. We cross-cut it to open it for more even cooking, seasoned it, smoked on a low setting for a while, cranked up the temp over an open flame and then finished it with a terrific candied glaze.

We spatchcocked an 11 pound turkey and injected with Tony Catchere's cajun butter seasoning. It was WONDERFUL. We cooked it on the Yoder pellet grill. This was simple and so easy. It was a terrific success. It was juicy, flavorful, and the skin was PERFECT.

I have areas of rust on mine that have deteriorated to become actual holes. Any thoughts on how I can repair those?
You may want to see if a local welder could repair the body by welding in new steel. Or maybe your excuse to replace (upgrade) if it has given you many years of service!
Had it since 2011 so I think I will go with the upgrade idea😂🤣

@@bbqplusmine was an older Traeger, not sure of the model but I think it was prior to the Chinese ones…looking at the Traeger pro 780. Any experience with those?
I do not. My experience with Traegers are the older Pre-China versions. I upgraded the controller in a 125 and use it often. I really like the Green Mountain grills and I have a Yoder that I picked up for a steal of a price.
I got a question i just replaced the control board on my pit boss smoker now my auger stays running after shutdown what would cause that i can't find anything on it
That is odd. The maun fan should run for approx 10 minutes after shutdown to burn out any remaining pellets. Are you sure your fan and auger wires are not crossed?
@bbqplus yea they are not crossed I have red to red and yellow to yellow the main fan does run for about 10 minutes

Yeah, those were really tasty! Put a toothpick in each and brought them over at halftime... they were gone before Q3 started!

Thanks! I was able to but the Yoder @ 95% off... guy was moving out of state the next day and posted not for CHEAP! That is the only way it fit into my budget.

Yeah, that was a fun experiment and it turned out just like i had hoped! Probably best to use stainless food grade blades... just in case you were last cutting asbestos with your power tools!
Louisiana pellet grills suck so bad, stick with traeger!!!!!!!!!!!!!
I have bought, cleaned and upgraded 3 Louisiana Grills and they all have performed great. Maybe I am just lucky, but I have nothing but good to say about them. I will keep my fingers crossed!

@EugeneSanchez-gd9mq I buy parts from Amazon. Is this the round (controller in the end) or square hopper (controller on front) model? If it is really old, you may need to cut the controller mounting hole bigger. If you do, make sure you take equal amounts from each side so mounting screws line up. If this is for your use, consider upgrading the controller to a PID controller as it will hold temps better. Good luck!

Great timing. FYI I just bought some food grade stainless steel reciprocating saw blades from Amazon just for this purpose. They are reasonably priced.
I need to order up a set of bone saw blades for my sawzall. You can see i struggled a bit cutting them! I want to try some of these with a hot honey glaze!
Just a suggestion get yourself a reciprocating saw and a bone blade for it, cuts like butter.

Both looked good in their own respects. Did you find that the meat on the inside flaps where the bone would normally sit toto have any bark or not so much? I am off to go watch your spicy chex mix video lol. That sounds like a perfect snack
I kept the flap closed, so no bark formed as it was not a dry area. I think the bone does help impart flavor and richness... but on the boneless there is more surface area to season with the rub. I think I need to do a head to head test - bone in vs boneless and see if one is better than the other. Enjoy the spicy Chex mix!
Great experiment... I just switched from a Masterbuilt Electric to an Old Country Wrangler offset. I do miss the 'set it and forget it' nature of the electric, but I have noticed that everything I have made on the offset just tastes better to me. I also used to get heartburn about anytime I would bbq, but I haven't had any trouble since switching to the offset. I'm thinking it may be a bit cleaner burning, if you maintain the fire properly. Don't get me wrong, I don't turn down food that has been cooked on pellets or wood chips, and I wouldn't be opposed to getting a pellet smoker or another MES for days when I have a lot of other things going on, but at the moment, I definitely prefer cooking with a live fire. Once I learned to step back and relax, and not freak out about temp swings or a few minutes of dirty smoke after putting another log on, it has been a really fun experience. Just subscribed to your channel... when I get a chance, I'll dig into your back log, and check out some of the others... smoked chex mix, eh? That sounds like something I need in my life. Cheers!
Glad you are enjoying the offset experience! I have been keeping an eye out for a used O C Brazos for a good price. My OK Joe is a medium size, so big swings with tending the fire. If I had the space, I like how whole hog cooking guys have a burn barrel that they feed splits into and then shovel out embers into the pit. That's more dedication than i am ready for! I have a cabinet style Masterbuilt that has a charcoal/wood basket in the bottom and a fan that blows to keep the temp up to set point. That is almost a hybrid of offset & pellet... I have to spend more time using that smoker! Thanks for subscribing! I hope my videos inspire and educate you!

Yes, I neglected to mention the sweetness that came through from the pineapple and apple juice. I think sweetness is a great pairing with Pork. I hope to make some significant steps in finishing the smokehouse in the next couple weeks. My electrician is coming on Wednesday... so I can say goodbye to extention cords!

I had an older GMG that neither the up or down buttons worked! I would suggest pulling the controller and give a good douse of electronic contact cleaner. Hopefully, that will get it working. Fingers crossed for you!

I have a grill made from an old drum, but the inside is rusty, so can these two paints be applied?
@eruu1203 do not paint inside of a grill. I never use any chemicals other than oven cleaner inside a grill. Beat to use a wire brush or wire wheel on a drill or grinder to get rid of the rust. Then, vacuum out and spray inside with PAM or a cooking oil. Fire it up and bake on the oil. Maybe do it one more time and you are ready to go! Thanks for watching!

Really like your smoker l have a small 550 Pitboss pellet grill. Works great but sometimes it’s too small for what l’m cooking on that day. Hello again, I wonder if you could help me with a question that Traeger support could not answer. I need to replace the 4A 250V fuse in the controller. Nowhere does Traeger indicate whether it is a fast blow or a slow blow fuse. Online help not helpful. Do you know? Thank you kindly! John
@johnbauman4005 Hey John! Is this in your 075? Personally I have never seen a slow blow fuse in a pellet grill. They seem to be standard with a 5A 250V fuse. Was yours a 4A?
@bbqplus Yes, it's my 075. I decided to try and widen the hole for a new controller as you suggested, with a new more powerful Dremel tool. While doing that I shorted out the old controller accidentally because, like an idiot, I forgot to unplug the Traeger. I can't read the writing on the tiny metal endcaps, but the plastic fuse holder had 4A 240 V molded in to it. The Traeger site says 3-5 A 240V. When I went to Amazon to buy fuses they offered instant blow and slow blow and I didn't know which to buy. I googled and found slow blow are used when fast starts with big draws are necessary, e.g. with controllers, pumps, compressors, etc. Fast (instant) blow fuses are used to protect electronic circuits. Well, the device IS a controller and the fuse IS on a PCB, so.... Next I tried Traeger support and the guy had no idea what I was talking about and neither did the person(s) he was talking to while I was waiting. So here I am once again at the feet of the guru. I'll order the instant blow fuses. I'm curious if I fried some part of the board or just the fuse. Thanks again!
I wnder what grit flap disc to use?
I would start out with at least 100 grit. Less than that will make lines and gouges in the metal. Those lines will show in your paint.
Hi, Texan here. People spend lot of time and money trying to make a tasty and juicy brisket, but don't think i've ever seen the complete opposite end of the spectrum. How does that much juice even happen? Also that juice made the brisket way too tender. It should hold up under its own weight but come apart easily when tugged. Not fall apart when you pick it up.
I think adding the tallow @ wrapping really added the juice. I don't cook for competitions, just to make tasty food for my friends/family and to share my results with others.
My fuse was a little different in my GMG Daniel Boone. After some research found out it was a fast-acting fuse (F5AL250V original fuse number) and found the right one at a local ace. A 5x20mm GMA 5A by Bussman.

Where was it on the daniel boone? I only found 2 good fuses in my power supply inside the 12v connectors... nothing in line like this video shows but mine suddenly died....

Party Mix has been a family tradition every year, normally done in the kitchen oven. Finishing it off in a smoker really is a game changer.

Oh yes that's one of my favorites!! For the campsite we usually go to its mostly 4 hours away, and on our way back we happen to pass fat smittys, so most times we stop by while going home. :)

Can you replace a wifi D2 controller with a basic controller because I refuse to pay 300.00 for a D2 controller? I don't mind modifying the traeger grill to make it work.
Unfortunately you can't. The D2 is very proprietary. sorry :-(
Any idea why my D2 controller says fan disconnected? I put a new traeger fan on it and still have the same error. My grill is only a year and a half old.
Hello, and thank you! I got one for free because they said the ignitor didn't work. I had the same problem you described, it wouldn't do anything when turned switch on, no led lights or anything. I found your video, replaced the fuse and it turned on! I updated the firmware (apparently successfully), then i tried running the grill. I pushed the temp up button, it said 0, then 1, i never heard and auger noise or any noise. Then the lights went black again. Assuming the fuse blew again. What do you think causes the fuse to blow?
That's a tough one. I had a GMG with the same issue. Would die in startup sequence. I ended up replacing the controller :-(

Jus picked up a second hand traeger, there is a bit of rust internal. Could i use a wire brush in there and vacum it up and just spray with oil to coat it ??
@kelvinlewis2089 That is exactly what you should do! Never use any chemicals inside the cook chamber. You can also use a wire wheel on a drill or a grinder to make the rust removal easier. Before 1st cook, spray with vegetable oil... then wipe out with a towel to get rid of any particles. Spray again as a protectant.

Thank you Sir! I have an old Traeger model 075, from the early to mid 2000s. I upgraded it from the "Low - Med - Hi" original controller to the digital controller you removed for this video about 8-10 years ago. Recently I decided to upgrade again to the 2 probe controller you show here. I took the older controller out with some difficulty - a couple of those plugs acted like they were glued together. When the new controller arrived it absolutely would NOT fit in the hole on the Traeger despite assurances from Traeger sales and service. I did two real time zoom sessions with them and could not get the thing in there. So I sent it back. Since I didn't expect to have to reinstall the old controller I didn't take pics before disconnecting the leads (Doh! 🤦♂️). This video saved my bacon! The purple leads were the only ones clearly color-coded. So, thanks to you we're good-to-go for Thanksgiving in no time. BUT you got me thinking - somehow YOU are able to do this upgrade, why can't I? I think it just came to me - I should have put the faceplate of the controller through from the back - right? I bet that would work! There are 2 PCBs on the newest controller instead of one, and a wire protrudes on the right side while a component protrudes on the left side...these may not be an issue if the controller is pushed through from the back. DOH! again. Can you confirm this? If so I will order another new controller and try again. My only consolation is the Traeger support guy didn't think of that either. Thumbs up & subscribed! Hey John! Glad this helped you out. Couple of things to know when you upgrade these "classics" with the Smoke-Medium-High controller. I have restored a bunch of these. 1. New controllers are just a bit wider than the old. You need to widen out the opening just a bit. I use a grinder with a cutoff wheel. You need to shave about 1/16th inch off each side. If you take it all off one side, the mounting screws will be off. 2. New controllers use an RTD probe (thermocouple) to feed current interior temp info to the device. This tells the controller when to start the feed of pellets to hit the temp you set. You will have to drill to mount the RTD on the left side lip in the cook chamber and drill to run the wires out to connect with the controller. This video may help a bit. @bbqplus Wow! Thanks again. I was going to re-order the upgraded controller figuring I had flunked an IQ test and inserting it from behind would solve the issue. I don't own an angle grinder, with or without a cut off wheel, and I don't think my Dremel is up to the task. 🤔🤔🤔 Perhaps a good excuse to get one, but then I'm not sure I could cut a precise straight line - never took shop or worked with metal. I did compare the 2 controllers and I *thought* the face plates were the same size, but maybe I was wrong. I'll definitely check out your other videos, but not sure I'm up to make the Traeger my first metal work project. Would not want to botch it. I'll let you know if I do dig into it.
