Güera and Greg, life is not fair. Those tacos are awesome. They are my favor., and I am dying to eat some. I have to wait until December for my Christmas vacation in Mexico City. I can say that the main difference with other tacos is that "Tacos de Canasta" are made with different "guisados" casseroles. Food prepared at home. In other words the hard part is to prepare the dishes. Once you have them is easy to assemble the "basket". And the thing that make them delicious beside already being a good dish "casserole" is the sweaty part. I guess there is where all the flavors get mixed and give them the unique flavor. OMG. And the salsa uffffff. THE BEST!!!💚😛😁😁😁❤

I had a tacos al vapor combo (4 small tacos) they come in four flavors, re-fried beans, mashed potatoes, shredded beef and chicken, in Santa Ana, California, the best ones I've ever had, they got a delicious red salsa and those carrots and chiles curados, I also ordered a large Horchata, the total was $14.+ USD including tax. If I'm craving them I don't care if I have to drive over an hour just to eat them. Anyways I thought I would share my experience with you guys.To me I don't care so much about their cost and having to spend 2 hour round trip drive just to taste them, as long as they taste great. You should definetly come to Tehuacán in Puebla, we are the cradle of corn and avocado, easily the best tortillas in Mexico, great food and a lot of history.

In Ensenada I actually don't like to eat in restaurants with other Americans. It is hard to describe the feeling but is a particular reverence and slower pace about the food that is hard to describe. The guys who prepare the mariscos are very quiet and focused on the correct way to fill a plate with that amazing seafood. Americans usually eat to hurredly, time is an important commodity but also I usually only want to hear the Spanish language. There are jerks too in Mexico that is true anywhere you go but I've noticed places where the staff have an attitude no one from town seems to go there and the restaurant is always empty. Food is very and central to the day and you can eat much later at night if you want to. It is not in the least a snobby, know it all thing. Maybe the way Italian families, at least the older generations on the East Coast of the US where they cook the sauces all day and each family has its own recipe. There's no such thing as a greasy spoon restaurant here. When I was back in the Northeast US I went to a greasy spoon place that we went into because it was so freezing cold and we didn't want to walk even across the street it was frigid icy cold but the food was so heavy with grease. Your basic Mexican taco is always going to be at a certain quality and affordable. Maybe the guacamole might be a little bit watered down and not as creamy as in a better place but that's about as bad as it is going to get. Just beware of the fiery sauces.
You must go to the new Alfredo Harp Helu stadium to taste the cochinita tacos. It’s a little weird that you had never sentido to a baseball game in Mexico.
