There's a theory going around that Gwyndolin was created by Seathe and placed inside Gwyn's wife in a similar way that Priscilla was created using Gwynevere. It's pretty commonly theorized that Seathe created Priscilla, he's also known for making snake creatures. Goes a bit towards explaining why Gwyn kept Gwyndolin hidden away and why she has a nack for Magic while all the other Gods tend to lean more towards miracles.

You aren't really told which side is truly good or evil. The game guides you to destroy ancient beings so that you can keep alive the age of fire (age of the gods), which is the status quo. There's also an option to end the age of fire, using something called the Dark Soul, which will bring forth the age of man...who knows if that will be better or worse, because the gods also screw over mankind. Gwyndolyn keeps himself hidden, using an illusion of his sister to guide the player to keep the age of fire going. See Gwyndolyn who is hiding, or destroy the illusion of his sister, and he will become hostile to the player.
@Tommaso Grillo To be fair, the abyss is also a threat to humans, it is a corrupting force and everytime someone tries to control it the people are turned into monsters and the kingdom collapses. See Oolacile, or New Londo, where humans actually started going around as darkwraiths stealing humanity. Also look at the locust preachers in DS3, who were created to lure humans towards the dark, but were corrupted anyway and started devouring them. There is no good or bad in Dark Souls, there is status quo, or there is the complete unknown, which could be better, but doesn't look that way. Also, the gods don't treat humans as shit, they mainly guide them. Outside of Lordran there are human kingdoms, and they are the ones who treat undead like shit, althought Lloyd might have a lot to do with it. Gwyn was afraid for good reason, and it's not clear to what extent an age of dark would be beneficial for humans.

Aka, they're mostly trying to save their own ass, by throwing humanity under the bus. There's also a layer of deception over everything. In Dark Souls 1, you're told you're destined to succeed Gwyn as ruler of the gods. The fact that this entails immediately burning yourself to sustain the flame isn't apparent until the end. One could interpret this as the PC effectively being tricked into feeding the flame.

The ring I believe is called “Reversal Ring” though I could be wrong on the name. The cannon description of the ring is; “A divine ring granted to Darkmoon Gwyndolin in his youth. Makes males preform female actions, and vice-versa.” Basically, the easiest way I can explain it is, the ring gives biological males estrogen, and biological females testosterone. Hope my description and explain helps.
