Crispy chicken cutlet is a street food I must eat every time I return to Taiwan, and I usually also order some fried chicken skin and fried chicken butt to go with it.
After living in South Africa for so many years, I’ve learned to make whatever I crave by myself. If you're like me, living abroad or just love Taiwanese street food, you can follow this recipe and try making it yourself too!"
食材:
帶骨雞胸肉 兩片(也可以用沒有骨頭的)
醃料:
黑胡椒 1茶匙
白胡椒 1茶匙
鹽 1茶匙
砂糖 1茶匙
五香粉 1/2茶匙
蒜泥 3~4顆蒜頭磨成泥
雞粉 1茶匙
小蘇打粉 1/4茶匙
水 100ml
米酒 1大匙
脆皮粉漿材料:
低筋麵粉 80g
地瓜粉 40g
玉米粉 40g
蒜粉 1茶匙
鹽 1茶匙
糖 1茶匙
水 200~250 ml (將上述材料混勻後,慢慢加水至麵糊濃稠可稍微流動即可。不同的麵粉吸水量不同)
Ingredients:
• Bone-in chicken breast - 2 pieces (you can also use boneless)
Marinade:
• Black pepper - 1 teaspoon
• White pepper - 1 teaspoon
• Salt - 1 teaspoon
• Sugar - 1 teaspoon
• Five-spice powder - 1/2 teaspoon
• Garlic paste - 3 to 4 cloves of garlic, minced
• Chicken powder - 1 teaspoon
• Baking soda - 1/4 teaspoon
• Water - 100 ml
• Rice wine - 1 tablespoon
Crispy Batter:
• Cake flour - 80g
• Sweet potato starch - 40g
• Cornstarch - 40g
• Garlic powder - 1 teaspoon
• Salt - 1 teaspoon
• Sugar - 1 teaspoon
• Water - 200-250 ml (Mix the above ingredients, then gradually add water until the batter is thick but slightly runny. The amount of water may vary depending on the flour’s absorbency.)
