Hello! If you're looking for substitutes for mustard greens in Hawaiian oxtail soup, you might consider using kale, collard greens, or even Swiss chard. These options should provide a similar hearty texture and a slightly bitter flavor like mustard greens. Feel free to experiment and see which one you like best! 🌿🍲
Oh no, that's a bummer! If the oxtail is just a little burnt, you could cut off the burnt parts and use the rest. But if it's really burnt, it might taste bad, so starting over could be best. Next time, try using a timer so you don't forget it. Don't worry, we all make mistakes when cooking. Just keep trying, you're doing great!
Thanks for the question! The boiled peanuts actually comes from Chinese influence in Hawaii and in my recipe adding bay leaves doesn’t necessarily make it more Filipino but as a Filipino chef, I like those Bay leaf flavors in this dish. At the same time Hawaiian food is heavily influenced by Filipino food.
Hi@@geronimocramos. Aside from Filipinos, I can agree other cultures influences Hawaiian cuisine such as Chinese, Japanese, Korean, Portuguese and probably other sub-cultures. After a Sunday of I reading and Viewing recipes on Hawaiian oxtail soup, it varies and can be represented with different aromatic ingredients or vegetables. For example, I didn’t see many with a mire poix or bay leaves. However I’ve seen some that swap out orange peel with lemon peel, dates for peanuts and a dipping sauce for the meat as well. I’ve never tried this soup, but very aware oxtail is delicious, so I look forward to creating a version that appealing to my taste (likely in the IPot to speed it up :) I like your step by step video and calmness and clarity. I’ll definitely 👍this video and sub 🙏, I’ll check out your other videos too :)
@islandcandies5963 I love to hear it! And thanks for sharing your research. lately, I’ve been doubling the aromatics in my oxtail recipe and have just been putting in all the fresh peel from one orange instead of drying them out and it’s made the broth much more fragrant and delicious.

Is this more Filipino Hawaiian oxtail soup I noticed in some Hawaiian recipes they had boiled peanuts and no bay leaves, onions. Please clarify.
