Super Simple 5-Ingredient Keto Lemon Bars

- With a light and tart lemon filling and a decadently buttery and sweet crust, these keto-approved lemon bars are only made from 5 ingredients (most of which you can already find at home), and are super simple to make and consume.
Sometimes you’re in the mood for an intensely rich dessert-think chocolate cake or ice cream-and other times, you crave something a bit lighter. Making lemon bars during the summer or when you want something fresh and fruity is a great way to use up any old lemons lying around the house. Plus, the contrast between the slightly tangy filling and the sweet crust is definitely worth savoring!
Unlike a typical shortbread or pastry crust accompanying regular lemon bars, our keto-friendly crust is lower in carbs but has as much flavor. Adding in erythritol as a sugar substitute combines beautifully with the richness of salted butter, which provides a great base to the lemon topping.
After combining the ingredients in the filling together, you’ll want to bake it so the eggs can set and bind the mix well. Feel free to top it off with some fresh berries, an additional sprinkling of erythritol, or even more lemon zest. If you want to lean into the freshness of the lemons, leave the bars in the fridge until you’re just ready to serve.

Keen to try this recipe
Let me know what you think when you do!
Yum!
Can allulose be a substitution?
Yes, you can definitely use allulose instead!
I thought the same thing (subbing with allulose as that's what I usually use). My plan is to use allulose but sub some of it with an allulose/monkfruit mix because allulose is so much less sweet than other sugar free sweeteners.
How much grams is one cup? Could you also give grams in your receipts?
Depends on the ingredient. 1 cup almond flour would weigh less than 1 cup erythritol. You can google the conversion if you're not sure 👍
@@RuledMe that is why it could be helpful to use grams also
Where is the recipe
Not sure what you mean. The recipe is in the video...and a link to the written recipe is linked in the description?
Seeing the addition of 1 cup erythritol makes me shudder. It’s a sugar alcohol made from corn. Has been known to increase the risk of stroke and heart attack. Also can increase blood clots. The recipe does look delicious if something other than artificial sugars could be found.
If you actually read the study on that, you would know how flimsy it was. Not to mention that people using non-sugar sweeteners are typically already overweight so that is going to skew the data on stroke, heart attack, and blood clots. Erythritol isn't an artificial sweetener, either. As you said, it's made from corn so it's actually considered a natural sweetener.
You're welcome to use a different sweetener, though!
@@RuledMe thank you for clarifying that. I did quote only what I’ve read and didn’t realize the info was updated.
@@marcamp5450 Maybe cut into 16 squares, so it's only equivalent to 1 T. sweetener/serving?
@@RuledMenatural sweetener but corn isn't good either for metabolism specifically for those who take keto diet, anything derived from corn is not recommended.
Well then don’t eat the entire pan
