I think the breakfast enchiladas of the clear winner. That looks incredible!! Using eggs as a tortillas was genius. This gave me all sorts of ideas to use that
OMG I love Mexican food sooo much and have really missed it since going keto two years ago and I’m so excited I’m going to make all of these recipes. I’m making my grocery list now. Thanks.
I just made the Chicken Enchilada Soup and it is SOOOO delicious. I added more chicken and another cup of chicken broth to stretch it. It is so delicious I'm so excited. And it does have a kick with that Cayenne in it but it's so delicious. Ty🥰
I was watching another keto diet when this video autoplayed. I was going to go back to what I was watching, but I seen the introduction. The recipes looked so good not only did I stay to watch, but am now subscribing. I am also going to save this video and make these recipes! Awesome intro, it pulled me right in!
@@RuledMe I am definitely going to. Also, I don't know if you are aware, but there are low carb tortillas available now in grocery store chains. I buy "mission carb balance" at WinCo. They are 4 net carbs per tortilla! I will try some recipes your way and with the tortillas! But you may want to try them out for some recipes! They taste like regular flour tortillas ☺️. I would love a tortilla soup and enchiladas recipe using the low carb tortillas! Thank you for the great keto inspo!
@@Rashelle. Yes, I know about them and most of the other brands out there. I'd say most people prefer the La Tortilla Factory brand, but any of them work. I get a lot of negative comments when I use ingredients like that so we tend to make our own tortillas for recipes. Using those tortillas would be considered "dirty keto" (www.ruled.me/dirty-lazy-keto-vs-clean-keto-should-you-go-clean/). We have quite a lot of recipes that use tortillas, though, and you're welcome to use the store-bought ones in them, you'd just need to adjust the macros of the recipe to accommodate for the tortillas that you use.
@@RuledMe I'm sorry so many people like to tear you down for doing a free service. There will always be people out there that look at things in a negative light. Just know that many of us appreciate this kind of content, and those that create it! I am going to be checking out all your recipes! I'm glad you are aware of the tortillas and thanks for the other option. I have never made from scratch tortillas so that will be fun! 😁
@@Rashelle. I appreciate your understanding and your kind words. I don't think a lot of people understand the amount of work and money that goes into video-making or they're just used to getting tons of free content on RUclips but it definitely sucks when you put in a bunch of hours and then people are super negative. That's why I try to do what I can to mitigate that. Low-carb tortillas can be quite nice to be honest - we have a recipe here: www.ruled.me/low-carb-tortillas/
Honestly doing keto has been one of the best decisions I’ve made ! What’s keeping people from learning about it and actually trying it out ?? Legit question lol anyone ?
A lot of people won't do keto because they think it's too difficult or don't want to start on a different diet. The vast majority of people that do try keto only do it for about a week. Some people just find it too difficult to cut carbs out of their diet to be honest.
@@RuledMe I see. That does make perfect sense. Thank you so much for your input. What did you do to become “un addicted” to carbs and bad stuff 😂 Anything crazy like hold bread while u eat a salad ? (Kidding but I am curious)
@@08scyko I just liked how low-carb made me feel. Carbs make me feel super tired and lethargic and once I changed my eating I just felt a whole lot better. I've been doing keto for 15 years or so now, so it's just second nature for me. Staying disciplined helped take away all of those cravings and I crave different things now :)
@@RuledMe amazing !! Thank you so much for taking the time to respond ! I have a lot of friends that are skeptical whether going keto is even worth. I will definitely show the answer from a well renowned source ! Hey any chance I can get you to link up with me ?? I have a few idea I want to swing by you regarding keto and overall good health.
I would use the Mission Carb Balance (yummy) tortillas for my Mexican dishes. The carbs are very low and they are actually good. I use the whole wheat small ones.
You can definitely do that to save some time - I just find it helps keep some layering and texture in there. The cauliflower tends to get a bit more mushy when you mix it up but it's still very tasty!

17 years keto with small xmas-sized breaks every few years but mexican food has always been my weakness! Never going to be restricted to wings again!
