- Quick Easy Plant-Based Cauliflower Alfredo with Pickled Lentils and Black Bean Fettuccine (nut-free, GF, oil-Free) - Instant Pot Recipe
This is the third dish in my week-long series of WFPB recipes. Instead of being a ”perfect” representation of my “A Grain, a Bean, a Veggie, a Green, and a Seed” concept like my “Perfect” Bowl, or my “Perfect” Stew, this recipe for Quick and Easy Cauliflower Alfredo with Pickled Lentils and Black Bean Fettuccine requires a bit of shoe-horning since some of the ingredients like the bean-based pasta and the sprouting broccoli pull double duty. But it’s still delicious, simple to make, and a super hearty WFPB meal.

Thanks! They are truly so good. I put them on everything. And that sauce, I've been making it for years now, and I'm always impressed with it. Also, funny thing, I've added my "sausagey seasoning" to the alfredo and made a cauliflower gravy... It's actually really amazing, too.

OMG Michael. I have to report to you about the Mealthy air fryer lid. I got it to use with my instant pot in my RV. It’s smaller, easier to clean, has a lower power requirement, and is actually quieter, than my beloved air fryer. PLUS it has a clear lid for a view of the food. I’M IN LOVE! Now if one has the space for an air frying oven like yours, fine. If not, this thing is the bomb. OOXXOO Linda

It was incredible! I really can’t believe how delicious!!! First night of course the lentils weren’t ready and I couldn’t wait to try the Alfredo, so I had it without. Second day leftovers with the lentils put the deliciousness over the top!

Lol daily content is hard, and I put us behind by accidently deleting an entire video we already shot for the week. In all my years of shooting and editing ive never deleted footage that wasnt backed up first, so thats just added to the challenge of getting something out every day.

I've played a bit with the sunnie seeds, due to my daughter's allergy to cashews 😢. It might help with the creaminess factor to soak them first, like you would with cashews. Although on second thought since you cooked them in liquid might not make a diff. AND another thing I've learned lately, hulled hemp seeds when blended will give a nice creamy result too, and super healthy.
@Kayakdog I have a very basic crock pot tomato soup. Once cooked I use my stick blender to blend in the hemp seeds, and it makes it a "cream" of tomato soup, really good.
Yup, the cooking makes them super soft. But if I hadn't done that, soaking them would have helped a ton.
