Or also called KAZARIBOCHO(飾り包丁),
This is a technique used to decorate Japanese food. This decoration is often used on our channel.

The knives used in this video are common petty knives sold everywhere.
By sharpening it with a Sharpening stone, you can cut vegetable like this video.

May I ask which knife you use to cut the cucumber please?
In this video, we use a small petty knife to cut cucumbers.
You can cut with a large knife, but we find it easier to use a petty knife for detailed work.
