Lucifer suggested to Maze that she look for the biggest challenge she can get, which is why she ends up in Herrera's office watching the video, looking for a big challenge. This episode was shot during S2, due to the actress who plays Maze being on maternity leave during the first part of S3. This episode was focused on Maze to keep her present in the story. In fact the actress was 5 months pregnant when she shot this episode. That is why the fight in the snow is not very hard and she wears loose clothes throughout the episode.
I think the thing to remember about Lucifer is that it really takes its time with some of its storylines and character development. But it sure is an interesting ride getting there.

Maze took that case because multiple other bounty hunters have failed to get him so it could be more of a challenge for her
