I use a spear (main hand) and axe dual wield for the poke to hold them in place and finish them off with a axe headshot. A mace also works for more armoured opponents

What shield skills do you use?
Mobility, Counter, and Persist. I also skip Fend in Close Combat, because it makes me block when I want to attack.
