    Delicate pastry with a little of your favorite jam -- these may just be my favorite cookie of all time! If you have never tried a Kolaczki Cookie, let this be your sign! The pastry base is so simple, then top with jam, and a little powdered sugar. Seriously, these shouldn't be THIS good. But they are.

    Kolaczki Polish Cookies
    (CO-wāch-key)
    Ingredients
    🍪1 cup butter, softened
    🍪8 ounces cream cheese, softened
    🍪½ teaspoon almond extract
    🍪½ teaspoon salt
    🍪2 cups flour
    🍪Jam
    🍪powdered sugar
    Instructions
    🍪Cream together butter, cream cheese, and almond extract.
    🍪Mix together salt and flour, then add to the bowl with the mixer on low speed until just combined. Do not overmix.
    🍪Wrap dough in plastic wrap and flatten into a rectangle. Refrigerate for at least an hour.
    🍪Preheat your oven to 350°F and line your baking sheet with parchment. 🍪Sprinkle powdered sugar on your pastry mat or very clean counter.
    🍪Working quickly, cut the chilled dough in half and place one half on your pastry mat/counter and the other back in the refrigerator.
    🍪Roll the dough out to 1⁄4 inch thick then cut your dough into 2 ½ inch squares.
    🍪Place each square onto a baking sheet and add ½ tsp of jam into the centers of the pastry then carefully spread the jam out.
    🍪Cross one corner of the pastry square over the jam filling. Rub a small drop of water on the corner of the pastry square and then seal the cookie by overlapping with the opposite pastry square corner.
    🍪Bake for 10 to 20 minutes or until the edges are golden. Allow the cookies to cool for 5 minutes before transferring them to a wire cooling rack.
    🍪Dust with powdered sugar.

    Yours look great. My recipe calls for
    1 package piecrust mix (for 2-crust pie)
    1 package (3 ounces) cream cheese, softened
    2 tablespoons sugar
    2 tablespoons milk
    1 teaspoon lemon extract
    Roll to 10" square and cut 2 1/2" squares

      And how do you assemble? Does the cream cheese go in the Kolaczki, not the crust? Let me know! :) I have extra pie crusts here that I might have to try that easier already rolled out version lol

    I wonder if you use sweet minced meat, that you use in Christmas minced pies in England
