I watched this episode as it aired, and there were people calling the restaurant to make reservations, and asking if the owner would be singing tonight. She took it as a sign that people wanted to hear her sing. No one had the heart to tell her that it was the exact opposite, that they weren't going to bother coming if she was going to do awful renditions of Cher songs.
Cher song, technically. Only one tune. Not a good one either.

He actually seems pretty jolly whenever the owners are polite and actually caring (I can’t think of the hotel hell episode name but it was an older couple and the man was in a car accident and they lost all the staff due to the hospital bills but they were actually very sweet and caring and were doing their best and knew how to run a hotel they just lost a little too much and needed help getting back on their feet, that episode was probably the happiest and kindest ramsey ive seen)

I love the waitress' comment that the owner thought there was enough Mexican food in New Mexico. Yes, if you're a local, that's probably the case. But most of the people who want to eat at a hotel restaurant aren't FROM New Mexico, and they're itching to try the local cuisine. It's hard to pick a place further geographically from Italy than New Mexico.
