      Don't forget this show is heavily scripted. "Buzzard" taking 3 bottles of wine right under Gordon's nose, Lex running off in the middle of service... Lela might have decided beforehand they had to go and they just dramatized the whole scene. Or it could have been Ricky throwing everyone under the bus by ratting Buzzard out and not helping Lex. The more drama the better.

    I really liked Ricky. Swallowed his ego quickly, and just kept to it.
    Getting demoted like that must be a crazy feeling. He knew he was the better head chef, said nothing, worked hard, and got his position back.
    What a great character development :)

      Maybe not better at cooking, but better at managing a kitchen. And that is a big part of being the head chef. You don't just make food, you manage the people that make food.

Lex is the better cook and got thrown in the deep end by having to head the kitchen for the first time on its literal busiest night while Ricky had been doing that job for years. One of the most baffling changes you ever see this is why you know the american kitchen nightmares so scripted lol. Too bad when the script ends and the paid customers stop coming the restaurants always fail like this one did in 5 months.

    Say what you wish to say about Tabitha, but I appreciate that she actually takes her job seriously. She needed to stop so frequently coming to loggerheads with Ricky- and she did. She was clearly loyal to Lela and excelled in her new position. I hope she's excelling in whatever career she's pursuing now 🤞

    Ricky is amazing when he steps in, he really showed his true colours under pressure and I'm glad gordon congratulated him afterwards as he deserved it. Thought he was a prick at the start but he said it himself at the end it was his ego! I wish them all the best even though the restraunt didn't survive in the end.

      One of the recurring themes in this show is people who've been hired into a job where they need guidance, but then received none. I feel like Ricky was very much that person, and so to survive, he just thought "fake it til you make it." Sure, he's been hired as a head chef, but if HIS manager doesn't understand what it is the place is trying to achieve, over than "fine dining" (a phrase that means what, exactly?), then how the heck is Ricky supposed to know?
      His entire demeanour changed once the weight of responsibility was lifted off his shoulders. Suddenly he was excited and interested. Getting rid of the thieving twat who was probably encouraging his complacent behaviour also probably helped.

      I agree it was a remarkable turnaround (and his future looks bright), but you're going too easy on him. It wasn't just his ego - he was incredibly lazy and taking advantage of an incredibly useless owner, who I can't believe got away scot-free herself. She moaned about the staff not listening to her, but it doesn't look like she ever made any attempt to try and manage any of them. She also had no idea what they were cooking - which might be excusable (just) while busy, popular and profitable but not when you're on the verge of bankruptcy (especially when you're still borrowing money from your sister).

    What a redemption arc for Ricky. When we first met him, he seemed like an arrogant man who was lazy, disrespectful and just had a “I don’t care what you all think” kind of vibe.
    But by the end, he showed his passion and after being humiliated by Gordon, he bounced back and gained his respect again. It’s almost like something out of a novel.
    Shame that the restaurant had to close down but at least Ricky went on and continued to be a chef and from what I hear is doing great.

      You sure about that? I mean, in many eurpean countries, taking food from a garbage dump behind the grocery store is considered stealing. So it certainly isn't an american thing.
      Personally, I would never not allow one of my employees to take home discarded meals. In fact, I would be happy if the food doesn't go to waste, _but_ I would at least expect my employees to ask me first. If they take food without asking me, I too would be pissed.

    Lela's closed in 2007 as although business had improved Lela's debts were too high.
    Yelp reviews were mostly negative.
    In it's place now is Aladdin Jr Restaurant & Cafe, an Arab restaurant with good reviews.
    After Lela's Ricky went on to become Executive Chef at The Corner Butcher Shop in La Verne.

    Ricky was a star at the end! He stepped up and helped create energy which created the success towards the end of the service.
    Even if he mistaked food which i found hilarious, he was great at improving himself both as a chef and a person!

      I dont think lex was a bad chef per se but he was under A LOT of pressure all of a sudden and he didn’t really have the experience to lead a kitchen and was overwhelmed by the whole thing. And it is pretty easy to imagine that being bossed around for all those months by Ricky’s ego had that effect on him. But alas he shouldn’t have walked out in the middle of service. He is just not cut out to handle pressure and responsibility

      Lex IS a better cook, unfortunately he cracked pretty fast under pressure. Ricky got very lucky, he was able to shine because of that. Everyone praising him for this redemption arc.. This dude is still a bad cook and very arrogant. I don't know WHY you would want to keep a HEAD CHEF that doesn't even know the different between chicken and beef... it seem just like such a basic knowledge

    The owner of this restaurant is so pathetic. She's too quiet and passive and she didn't even know her head chef is always using powdered mashed potatoes and one of her employees like to steal things. She's only saying "I hope everyone's attitude change tomorrow." Like did she expected everyone's attitude will change 180° at 2 days? I'm surprised Gordon didn't yell at her like the other owners, probably because she's an old lady but he's been dealing with a lot of stubborn old people in this show.

      - You know, while I agree that restaurants generally shouldn't use instant/powdered/frozen products especially if 'fresh' or 'made in house' words are used on menu listings, and I solidly agreed with Gordon with the whole potato situation, I have to admit - there is this one brand of dehydrated potatoes called "Idahoan" and I honestly think they are great, love the taste, and smooth texture. Granted most other powdered potatoes are not really that good, and often have a grainy texture, but those Idahoan dehydrated potato flakes cook up nice - no shame, no regrets :)

      @@tafua_a - Agreed, I too was saying that in my opinion, restaurants in general shouldn't be using such products, especially when one goes to pay for dinner out, you expect some minimum level of home made/home cooked etc etc, that is why there are categories, fast food is basically cheap burger in a bag type food - Eat in sit down places should be at the very least proper cooked meals from raw ingredients, "Fine Dining" for the whole "Going out for dinner" as a treat special occasion, you don't want or expect fast food/processed/frozen etc. That's what T.V. dinners are for, going out and paying $20-$30 a plate, you damn well better be getting homecooked fresh stuff, for sure 100% on the same page my guy

      He’s one of the few chefs on this show to go from being a complete generic knob to actually being somewhat humble. I know it’s probably hammed up for the show and all but meh, still nice to see.

    It's unfortunate that this restaurant was closed. Ricky seemed a bit arrogant in the beginning but in the end, his face expressions explains a great moment after the compliment from Gordon. When a professional says that you have done a good job, you are the man...That is great.

      @@stayhigh66 It's not that they don't call him - the format itself simply doesn't allow for help on time. They have specific number of episodes per season, so it's entirely possible for restaurant to wait months or a year for the filming crew. Then another year for the episode broadcast....
      Hence the huge debts by the time he goes there.

      Nah when you're working with food and you get busy you can't just go take a minute unless you feel you're gonna throw up or something. You need to get through your orders ASAP and like Lela said that if he couldn't handle it he should leave. Also Lex stated that he was definitely the better chef out or himself and Ricky so he did that to himself

      Having been the only cafe for 6 hours straight in crazy heat before even going to the bathroom, at the age of 17, he was looking for a reason to leave. If you're caring about the food and really in the flow then you wouldn't even notice 4 hours.

    You know Ricky may be loud and brash, but he showed he can be a good cook given the proper motivation. On the other hand, Lex seems like a nice guy because he's soft-spoken, but when things go wrong he becomes passive-aggressive and resentful. I'd rather work with a guy like Ricky over Lex.

    I worked for a restaurant where everything was frozen, pre packaged, absolute garbage, and yet people rate it 4/5 star. Its hilarious how dumb customers can be. People just dont know good food

    Caught a member of staff helping himself once,we had him on film from the last few weeks taking about 50 to 100 quid of stock each time.he left his bag outside the walk in fridge and went back in to get some more so i shut the door and locked it, then turned the temp down to -5 and phoned the boss.

    Know your market. Pomona is mainly a college/artsy area now. Majority of people are not looking for fine dining. Restaurant doomed to fail.Well to university in a small city. The nearest restaurant to campus was a fine dining italian place. Went out of business. The Irish pub that replaced it thrived as it catered to the large population of college students (and also their families who came into town to visit) with alcohol (we had a dry campus so was nice to have pub walking distance, could drink just not on campus grounds), affordable appetizers and things like trivia night to bring us in.
