  • You MUST TRY these delicious gluten-free DOOWAP or GLUTEN-FREE BRIOCHE type buns with chocolate chips. They are really delicious, tender buns, and in this gluten-free version they are fluffier than you could ever dream of.
    These DOOWAPs are:
    -GLUTEN-FREE
    -OPTIONAL LACTOSE-FREE
    -OPTIONAL EGG-FREE
    👉INGREDIENTS:
    60 g gluten-free oat flour
    210 g corn or rice starch
    30 g potato starch or tapioca starch
    3 g psyllium husk
    50 g sugar
    4 g vanilla sugar
    4 g salt
    3 g dry yeast
    210 g vegetable drink or milk
    50 g egg
    50 g butter or margarine
    6 g xanthan gum
    60 g chocolate chips
    Egg yolk for brushing
    👉 POSSIBLE SUBSTITUTIONS:
    ✔️ Oat flour, for any gluten-free cereal or pseudocereal flour: sorghum, rice, quinoa, teff.... If you substitute buckwheat or chickpea flour, reduce the amount of water by 15 g.

    ✔️ Egg for the same amount of aquafaba.
    ✔️ Sugar: if you cannot consume sugar, use your usual sweetener according to the manufacturer's equivalents.
