I’ve only ever made chicken liver pâté and it was surprisingly delicious (I don’t usually like liver) I also added onion, garlic, herbs, butter and cream and oh man...SO good! It also lasts a long time in the fridge I find.

Yeah I’m a big fan of chicken liver pate over beef liver. The difference is that the beef liver packs a bigger nutritional punch.

I've made both types of pate in the past, and found that beef liver pate has a very off-putting, grainy texture...only made it once, never again! Chicken liver gives a smooth velvety texture, so I always use chicken livers for pate. I add whipping cream to make it more dip-like, and eat it with pork crisps in lieu of crackers. A nice easy lunch to pack for work.
I would love to order a hard copy of The Carnivore Cookbook, but in checkout the option for shipping said "No shipping options exist for this address". So I guess they only ship to the States, and I'm in Canada.

Hi! Yeah the beef liver pate is a lot stronger when it comes to taste and I now prefer chicken liver pate overall. I didn't get a grainy texture though but I'll look out for that the next time I make it. That's a total bummer about the book. I'll ask Jessica if that's the case that they are unable to ship to Canada. Glad you watched the video....cheers!

Let's not forget lamb or pork, or indeed other animal, livers as alternatives.

The beef liver, I have to cook more. Your’s was like medium rare or medium done. Not for me. Mine have to be done.

Yeah beef liver is a tricky taste. I used to eat it raw but it was a real challenge. Sticking to the Pate. Thanks for watching and thanks for the comment. Cheers!
