This cheesecake is most certainly for the chocolate
lovers. It has all the components of a millionaires
shortbread but in cheesecake form. It is totally
delicious and a great Christmas Day dessert that you
can make in advance and pop in the freezer ready to
grab out and leave to defrost when you need it.
Ingredients:
100g butter
250g digestives
500g cream cheese
1 cup (240ml) double cream
1/4 cup (45g) icing sugar
200g carnation caramel
Ganache:
100g dark chocolate
100g double cream
Method:
1. Melt the butter in the microwave in a large bowl and
set aside.
2. Add the biscuits to a food processor and blitz until
you have a fine crumb. You can also do this by adding
to a freezer bag and bashing with a rolling pin.
3. Add the crushed biscuits to the melted butter and
then pour into a lined 9 inch springform tin. Press
down with the back of a spoon and then place in the
fridge while you make the cream cheese filling.
4. To a mixing bowl add the cream cheese, double
cream and icing sugar and whisk with an electric
handheld whisk until thick.
5. Remove from the fridge and spoon over the cream
cheese filling spreading flat with a spoon. Now place
back into the fridge.
6. Add the caramel to a small bowl and heat in the
microwave for 30-40 seconds or until just pourable. It
may have a few lumps so give it a little mix.
7. Remove the cheesecake and pour over the caramel
spreading carefully.
8. Back into the fridge for 20 minutes.
9. To make the ganache, break up the chocolate and
add to a mixing bowl. Heat the cream up in the
microwave in a heat proof jug for around 40 seconds
until hot but not boiling. Pour the cream over the
chocolate chunks and leave to sit for for a minute or so
before mixing until it comes together in a lovely
ganache.
10. Remove the cheesecake from the fridge and pour
the ganache over the top. Decorate with any chocolate
you like. Place back into the fridge for 5 hours
covering with cling film before freezing.
After 5 hours place into the freezer making sure it is
well covered. Remove from the freezer the day before
you want to eat it and leave to defrost in the fridge
overnight!
