You are the first I've seen react to rugby and work out the rules as you watch. Good job. There are 15 players per team with 8 substitutions. Players jerseys indicate what fixed position they play. 1-8 are the forwards, heavier players who engage in the two set piece plays that (initially) confused you. Firstly the lineout, which you correctly stated is for then the ball goes 'into touch' as it is called. Secondly the scrum, a very specific joint formation of all the forwards pushing over the ball. 9 to 14 are the backs and 15 is the full-back (also a back...) So when you see a #2 running 30 meters for a score or assist, that is the new rugby where the backs can actually pass, catch and run. You will love watching a full game!

The formation you asked about is a scrum. 8 players from each side form in 3 rows, 3 in the front , 4 in the middle and 1 at the back. The ball is put into the scrum between the front rows and the teams try to push each other off the ball, while moving the ball to the back of the scrum using only their feet.
There are a lot of videos of Rugby's Brutal Hits but fair warning a lot of them don't distinguish between really bad foul play (stuff that gets you kicked out of the game without someone replacing you) and legal but hard hits. Like if a defender hits above the shoulders or picks up a ball carrier past horizontal and brings him down on his head or neck that's usually a red card and your team plays a man down for the remainder of the game.
For context to help understand. The wingers are comparable to wide receivers and corners (usually the fastest on the team). Centres are a mix of running backs and linebackers. 1st5, a mix of a kicker and a quaterback (controls the game, makes most of the kicks but also runs and tackles). The loose forwards are a mix of linebackers and fullback (heavy hitters and power runners). Locks are a mix of tightends and linemen. Front row are our version of linemen.
As suggested elsewhere you would do well to watch a video of rugby Union laws (laws not rules,) you would get many answers to your questions. But the thing is, and answers your point about tossing the ball when tackled, is that unlike NFL (which derived from rugby) it’s a game of continuous play, until an infringement occurs, where the sides can compete to get the ball and score. Not a helmet, but a soft scrum cap, which is to help protect the ears when ther player is trapped at the bottom of a ruck. "Cauliflower Ear" used to be an issue for Rugby forwards. No helmets in Rugby, the only aid to prveent concussion is a mouthguard and the recently improved rules to cut down on head clashes.
I firmly believe that the NFL would benefit from changing the touchdown rule to having to ground the ball rather than simply running over the line as it’s mostly somewhat of an anticlimax in a close contest because with rugby league and rugby it ain’t over until the ball is grounded.
The most intense adrenaline rushes of my life have been hitting a big jump on a snowboard and a few times with the rugby ball in hand close to the tryline knowing there's 15 guys on the field who are going to do their utmost to stop you getting over it while you are doing the same to get there. Full adrenaline rush like you are running down a dark tunnel, only able to see the exit. No feeling like it.

There's no Offensive or Defensive team or Special teams. All players in both forms play offense and defense. The difference in both forms is in Rugby league you have 6 opportunities with the ball to score. Sort of like 1st - 4th downs in American football. After the 5th you either kick for field possession or if your tackled on the 6th you hand the ball over to the opposing team. Rugby union on the other hand is more complicated. There are no tackle counts and the ball is constantly in motion and is always contested. The play don't stop when a player is tackled, the ball is recycled and play continues. Unless there is and infringement in the play or a penalty then the ball goes to the opposition but other than that the ball is always live (constantly in play) In other words Rugby league is like checkers where as Union is more or less like chess.
