Heating up your bananas for 7-10 minutes in the oven at 350°F really helps this recipe too. You can do it during the preheating. Also helps ripen a slightly underripe banana. Great as always Felu!

I made this for my wife & I tonight and it was SO GOOD! I had to substitute a few things with what we had: lime juice, monk fruit sweetener, whole milk, & chocolate whey protein. I also added a couple grams of vanilla. It was still wonderful! It totally looks like meatloaf if you sub chocolate protein powder though. lol
These recipes are amazing, but could you make some without protein powder? I'm not sure what's the price in other countries, but here they almost doubled in price and it's not very efficient to use them anymore. Meat and lentils are cheaper for the same amount of protein.

I'd say if you don't use the egg whites then you would need 3 eggs in total. He uses 1 egg (about 50 grams) and 100 grams egg whites (for a total of 150 grams). For the same weight and volume you would need 3 eggs (3 eggs, about 50 to 55 grams each = about 150 grams).
I know the tablespoon measurement is easy enough if you have those little helper things (and caters to more people i guess) but if I have the bowl on my scale anyway could you maybe add those tsp-measurements in grams on screen or at least in the description so i can just chug that stuff in there? appreciate it!
I had the same thought … but, the ‘problem’ is that 1/2 tsp of baking powder on my scale was 2g, to the nearest gram. If that is actually 2.00g, then 1.5g would be 3/8 tsp and 2.5g would be 5/8 tsp. The point is, a teaspoon is a more accurate measure. Especially if baking powder is "just being chugged" into the bowl. If chugging means you decide to add 3g, you’re adding 3/4 tsp, not 1/2. Additionally, you can be another 0.5g off because the dry ingredients are, say, 99.5g and you add "2g" and bring the dry ingredient weight to, say, 102.5g, or 3g overall. Or, the dry ingredients may sit at 100.5g and you add enough to bring the weight to only 101.51, which is only 1.01g overall. Both appear to be "2g". It simply is not accurate to weigh such small weights of these ingredients.
That is very nice recipe. And my calories came almost the same. But I added two eggs and coconut milk an no sweetener, it really don’t need any sweetness than riped bananas and already sweet protein powder. It came out very nice and soft. Nam!
Have you considered that it may not be the crop itself you are allergic to, but rather one or more pesticide? This is why I ask (please bear with me): I had a friend who, for a long time, thought she was allergic to oats, but she loved them. I suggested she switch to organic oats because GMO oats were not legally required to be labeled as such at the time and organic oats were the only ones available that we could confirm were free of GMOs. (GMO crops are not generally bioengineered to improve our health, even though theoretically is the case that they _can_ be. They are usually bioengineered to tolerate way more pesticides than is healthy for any plant to survive.) She stuck to organic oats so it is possible the benefit was from organic farming specifically, but conventional non-GMOs may provide the same relief for you due to much lower glyphosate exposure. Just wanted to share this interesting tidbit. TL;DR: Try non-GMO or organic oats if you're tired of looking for oat substitutes.
I don't think this is an issue here. Backing paper is made to be put into the oven and ignite at >400° Celsius. Far from the Temperatur used for the recipe
Does anybody have a solution to why my bread looks tall and perfect coming out of the oven but then it falls and becomes denser? I like to cook, but I have a lot to learn about baking. My 1st batch of this bread was too doughy, so I made sure the interior temperature was on the higher end of the suggested 195-205F range. I wonder if I had too much wet ingredients, as I did use two whole eggs and not just an egg plus an egg white.

I made this and it turned out perfect. I had to leave out some ingredients, like yogurt and baking soda(I didn’t have any). I also didn’t use any erythritol and it really didn’t need it, the bread was sweet because of the bananas. Mine came out to about 970 cal, 92 g of protein, 135 carbs and 18 grams of fat total and per serving it’s it its about 122 cal, 2g fat, 16g carbs with 12 grams of protein for 8 servings. It was so easy to make and macro friendly. I’ll deff do it again but with the yogurt, still won’t add the erythritol bc it probably won’t need it

I used stevia and apparently you have to use 1/10 of that vs erythritol, so in the end the mixture was too liquidy.. (I realized after leaving it an hour in the oven - it wouldn't bake)
Before there was bakingsoda they used hardwhipped eggwhites for the same purpose. Bakingsoda was invented some time around th 1840s I really appreciate your recipes in my goal to get as much protein into my diet as possible.

If you take the calories and weight of the whole loaf, then you weigh whatever slice size you choose you can do some cross multiplication to get how many calories/macros are in that slice.

does erithrol agree with your digestion? I get alot of bloating and gas from all sugar alcohols (erithrol, sorbitol, maltiotol..), stevia and sucralose on the other hand gives me no issues
Stevia gives a lot of folks digestive issues (including me). - I’m glad you are not one of them 😊. I use monk fruit extract - no digestive issues at all.
1 egg weighs 50g so 2 eggs equal 100g egg whites so 3 eggs in total. You could also just go with 2 for the beginning and see how it goes. 2 should be already enough

Personally I add protein powder at the end to make is moist, because over-mixing ruins the texture and it dries out easily
Normally you would be right but with the added banana it works perfectly
