Brown sugar can be boiled and added to the rim of the cup to "color" it 3. just a head's up, you aren't supposed to push the matcha whisk to the bottom of the bowl/cup! if you hear scraping, you're pushing too hard. it's not super important, but you can damage your matcha whisk very easily that way :)
A better way to make this recipe is to make a brown sugar syrup to put the tapioca pearls in to soak the flavor of the brown sugar. I always let the boba sit in the tea before I add the milk or sparkling mineral water. I know it doesn't give a great ombre affect but the flavor has a deep earthen flavor to it.
i would've made a brown sugar syrup and put the cooked boba in the hot syrup, put it in the cup and swirled it around the sides to make it look pretty, and then add the milk and matcha

I had matcha today and I'm trying to get used to the taste but even with syrup and sugar, I still don't like it. It just tastes like fishy and grassy to me. Is flavoured matcha the way to go?
@pandallum4104 think of it as ground up green tea. You are tasting grassy/earthy because you are drinking a ground up leaf. One way to combat the fishy, which I don't normally taste a ton, might be to try another kind matcha. If you are getting fishy from an oil-like texture when you drink it, you might want to change up your additives (i.e., milk, honey, coffee, etc.). Edit: I just realized that you are using flavored matcha. That might be the fishy flavor. Try pure matcha a few times and see if you still get fishy. Taste is subject to people, so you might have a more sensitive palate to fish than I do.
