You prefer thin or Thick crust?
Not an easy question. I love puffy crust above all but in Lebanon as you certainly know they do a lot of things (manqoucha, sfeeHa...) with thin crust and it can only be this way.

My Wife and I like a thicker pan style crust that you can dip in sauce.

Thin, because of the crispiness & lightness of the dough, I can manage to eat more & not feel as full afterwards.
I think if I ever make it to Italy I'm going to spend all of my time travelling from one pizza city to the next. Then I can tell everyone that I saw all of the Italian masterpieces.

My first ever time in Puglia, we arrived very late into Pallignano A Mare.. this was one of the few restaurants open.. what an introduction to one of the most spectacular food regions of the world!! We have returned many times since.. I’m amazed that Vito worked here… wonderful restaurant!!

This summer, I was in the Apulia region on a week-long bikepacking adventure. We cycled the route from Bari through Arbolebello, Manduria, Lecce, Otranto, Brindisi, to Monopoli. I really regret that Vito's movie didn't come out before my trip :(, I would have definitely visited that pizzeria.

Thin Crust for most pizzas. If the bread is very tasty, thick crust is good as well.

I would love to see a video about whether dough enhancers (e.g. 5 stagioni lemady, maletd mik, etc) work and if we should use them or not.
I agree - and whether the enhancer is added to the poolish or the dough … some enhancers are only good for home ovens because they work best at low temperature.
So you think the oil for making it roll easier? Do you have a recipe for one this this?

No Vito 😂 this video comes 1 year too late 😅. Last year we were in Bari as it was the beginning and en port of our cruise. Stayed in Bari centro, also by the sea and vidited Monopoli. I was so nearby this pizzeria in Poligano... Now I must visit again some day. 🍕

Vito can you show us a bari style pizza recipe?
He has several older videos focusing on Bari style, including one or two where his dad makes the pizzas for us.
I wish you would do a video about what topping to put on pizzas, to get some variety.
He does have a lot of these. Go back and watch some of his older videos, especially with catering events where he has a wide variety of toppings. He makes some really unique pizzas using veggies and there's a fun one with fresh hot pepper puree as a base. There's one video where his wife picked out 4 different pizzas all with unusual toppings and then he made them for her to rank. Lots of content and toppings ideas if you watch through his video library. 👍

Can we use the same dough but less grams ? Is the sugar the secret for this ? As the dough we do just have 5g honey to a 1k flour
I think the sugar is solely to feed the yeast, specially since it seems that they are not using poolish.
I tried this and I failed.. I also think that 120g for the dough is very small for that size of pizza

I've been making pizzas like this at home for a while now. Maybe not exactly the same, but close. I love all sorts of pizzas but thin crust is my favorite
