    How does he maintain quality and consistency of products between the 8 locations? How does he plan to scale the business into more locations? How does he maintain profitability in online orders with high margins of food delivery platforms?
    These are some more questions that I would like to know.

    If staff salary is only 15% then it means his staff is definitely underpaid and he has a threat of attrition

      He is talking about unit economics, as you scale the fixed cost remains the same and volume would justify the margins
