    TACO SOUP
    2 lbs Ground Beef
    1 Tablespoon of Vegetable Oil
    1 Tablespoon Pi-YAHHHHH!! Seasoning
    2 Onions
    1 Bell Pepper
    1 Bunch Green Onions
    1 Tablespoon Minced Garlic
    1 (10oz) Can of Rotel
    1 Tablespoon of Chili Powder
    1 Envelope of Taco Seasoning
    1 Envelope of Ranch Seasoning
    2 Cups of Chicken Stock
    1 (15oz) Can of Ranch Style Beans
    1 (12oz) Bag of Frozen Corn
    *Optional Fixings*
    Shredded Cheese
    Sliced Jalapeños
    Sliced Avocado
    Sour Cream
    Corn Chips
    Get a large pot heated over a medium heat.
    Chop the onions, bell pepper, green onions and set aside.
    To the large pot, add the tablespoon of vegetable oil. Make sure it coats the bottoms evenly.
    Drop in the 2 lbs of ground beef.
    Season the beef with a tablespoon of
    Pi-YAHHHHH!! Seasoning.
    Cook the beef evenly until it’s brown and crumbly.
    Drain the beef through a strainer sitting on top of a bowl.
    Take the remaining drippings from the beef and add it back to the pot.
    Add the onion, bell pepper and green onions to the pot.
    Sauté the vegetables for 30 minutes.
    With about 10 minutes left, add the can of rotel and tablespoon of minced garlic.
    As the 30 minute mark approaches, add the chili powder, taco seasoning, ranch seasoning and mix well.
    Add a small amount of the chicken stock to help break up anything stuck to the bottom of the pot.
    Once broken up, add the remainder of the chicken stock, ground beef, and ranch style beans.
    Raise the heat to bring to a slight boil. Once you reach a slight boil, cover the pot, lower to a simmering heat, and let cook for one hour.
    Come back every 10 minutes stirring the bottom.
    After the one hour mark, add the 12 oz bag of frozen corn.
    Raise the heat to bring to a slight boil.
    Once a slight boil is reached, cover, lower to a simmering heat, and let cook for 30 minutes.
    Come back and stir every 10 minutes.
    Leave uncovered for the final 10 minutes of cooking.
    Serve with any of your favorite fixings. Enjoy!

    May need to try it with chicken! Also, I imagine just adding some enchilada sauce can change this more into an enchilada soup as well. Great work as always!

    I add one dried home-grown red cayenne pepper, one store-bought dried red "chili de arbol"......rough chopped WITH SEEDS, also I make mine a little more thinner with more chicken stock and/or water. Also, I use the Taco seasoning PLUS a triad of ground red chili's I got from Amazon in a three pack sampler...about a quarter to a half teaspoon each...ground Ancho, ground Guaillio, and ground chili de arbol....gives a very complex chili flavor.

    Awesome Recipe! The kicker is that PI-YAHHHHH Seasoning. It just excels the flavors in so many recipes. Just started using my 3rd can since it came out. Glad to see it in so many places from the mom pops, to hardware stores, big chains like Rouse's and most recently H.E.B. Stores. Love using the bamboo spatulas which work great for giving my pots and skillets longevity.

    A can or two of rinsed black beans makes it hardy. Crank the air down to about 68° and that soup will hit the spot.

    TACO CHILLI
    1 can each
    Rotel, chili beans, black beans, mexicorn, diced tomatoes.
    1 package of ground turkey
    1 Chopped onion
    1 Envelope of taco seasoning + 1 envelope of ranch dip/dressing
    Brown onion, brown turkey. Add 5 cans + 2 envelopes. Simmer...done!
    Note: don't drain any of cans, add them all. You can use BIG can of diced tomatoes and 2 pounds of ground turkey to bulk it up and make higher in protein
    Also, you can add a can of water if it's too thick
    I prefer white beans instead of black beans
    A dollop of sour cream, shredded cheese and crumbled Tostito chips atop is delish!!
    Can repurpose leftovers by adding tostitos for Nachos.

    Looks amazing 1 question. I love jalepenos could if I sauteed them with the other veggies would it change the flavor that much? I would like to keep the membrane and seeds for heat.

    This is what I can Taco soup. 1lb ground beef browned with taco seasoning and dried ranch dressing. Add two cans kidney beans two cans pinto beans. Add one can garbanzo beans one can black beans and one can crushed tomatoes.

    Leave out most of the liquid and you have a classic Mexican American picadillo. Perfect for American style tacos. Just add hard shell, orange cheese, lettuce and tomato. Salsa al gusto!

    Looks great, but I have a couple questions. Why chicken stock instead of beef? You're working with beef after all. Also, have you tried this as a quicker meal? Seems like all these flavors work come out good even if you dumped therm all in a pot and heated them through. Appreciate the recipe!!

      Agree! I think sauteeing in an instant pot and pressure cooking for 5 mins would work too. It would prob taste better the 2nd day this way.

    Using the beef grease to saute the veggies is an interesting take though.

    I'd call this a South Louisiana wet chili since there are no Mexican flavors. Try it with black beans, chipolte in adobo, pablano peppers, or maybe even some summer squash. Keep up the fun videos!
