    FOUR CHEESE LASAGNA
    1 Onion
    1 Green Bell Pepper
    2 Sticks of Celery
    4 Cloves of Garlic
    1/4 Cup of Olive Oil
    1 (12 oz) Can is Tomato Paste
    2 (10 oz) Cans of Mild Rotel
    2 (28 oz) Cans of Crushed Tomatoes
    3 (15 oz) Cans of Tomato Sauce
    1/4 Cup of Sugar
    1 Tablespoon of Parsley Flakes
    1 Teaspoon of Basil
    2 Teaspoons of Salt
    1 Teaspoon of Pepper
    A dash of Red Pepper Flakes
    3 Bay Leaves
    2 Cups of Water
    1 lb of Ground Beef
    1 lb of Hot Blend Breakfast Sausage
    1 Teaspoon of Cajun Seasoning
    1 Teaspoon of Garlic Powder
    1 (1/2 lb) Block of Provolone
    1 (1/2 lb) Block of Havarti
    1 (1/2 lb) Block of Mozzarella
    1 Small Container of Grated Parmesan
    1 Package of Lasagna Noodles
    BECHAMEL
    1 Stick of Butter
    1/2 Cup of Flour
    4 Cups of Milk
    1 Teaspoon of Salt
    1 Teaspoon of Pepper
    Start out by heating a large pot over medium heat.
    Chop the onion, bell pepper, and celery.
    Add the 1/4 cup of olive oil to the heated pot.
    Add the onion, bell pepper, and celery.
    Sauté for 10 minutes.
    Meanwhile, chop the garlic.
    After 10 minutes, add in the tomato paste and garlic. Sauté for another 10 minutes.
    After, add in the Rotel tomatoes, and sauté for another 5 minutes. Towards the end of sautéing, use a large fork to smash the tomatoes.
    Next add the crushed tomatoes, tomato sauce, sugar, parsley, basil, salt, pepper, crushed red pepper flakes, bay leaves, and blend evenly.
    Next add the two cups of water, but add it to the tomato cans, so that you can get up any tomato or sauce left in the cans.
    Raise your heat to where you see a slight boil, cover, lower to simmer, and let cook for 2 hours. Stir every 20 minuets.
    During this time, shred the cheeses into 3 separate bowls.
    At about the 1 hour mark, start heating a large pan off to the side.
    Preheat the oven to 350°
    Add a small amount of oil to the pan, and brown the ground beef and breakfast sausage.
    Season the meat with the Cajun Seasoning and Garlic Powder.
    Once the mixture is brown and crumbly, drain, and set off to the side.
    Wipe down your pan really good, you will use it to make the Bechamel.
    Put than pan back over the heat.
    Add the stick of butter to the pan.
    Once the butter has melted, blend in the 1/2 cup of flour. Continue blending until you have a smooth, blonde or tan color roux.
    During this process, you want to heat the milk.
    Once you’ve reached a blonde roux, blend in the warm milk a little at a time.
    After all the milk has been added, and you have a creamy white gravy, add the salt, pepper, and blend evenly.
    If you’re at the two hour mark of your sauce, turn all your fires off and begin fixing the lasagna.
    In an 8 x 11 inch baking dish you will add a bottom layer of sauce, a layer of raw lasagna noodles, another generous layer of sauce, a layer of beef mixture, three rows of bechamel over the beef, a sprinkle of Parmesan, and the shredded Provolone Cheese.
    Next layer, start with raw noodles, and then repeat the same process leading up to the Havarti cheese, and then the Mozzarella cheese.
    Cover with foil, and place in the oven for 30 minuets.
    After 30 minutes, remove the foil, increase the temperature to 375°, and let cook for another 30 minutes.
    When done, let sit for 10 minutes, use a knife and spatula to cut the first piece, and enjoy!

    The entire time I was watching I was thinking, I’m going to destroy my kitchen making this. When you zoomed out to show your wife’s face I swear I hollered with laughter. I don’t know if I have the energy to make this dish but it looks really good. Thanks for sharing.

    This recipe is one of your hidden gems. Most people probably wouldn't think to look for a lasagna recipe from someone who specializes in cajun food, but this lasagna is absolutely incredible. In fact, I never even cared for lasagna before this recipe because I can't stand Ricotta cheese.
    I made it for the first time right after you first posted the recipe, and it has been a family favorite ever since. We have dubbed it the "Bowman Family $100 Lasagna" due to the fact that I always end up buying the fanciest cheese to make it with lol!

    A trick I use on the Tomato Paste is to open one end of the can completely and push the round top through the bottom. It pushes all the paste out Cajun Ninja. Lasagna looks awesome. Bet it tastes even better.

    Holy Cow!!! Cooked the Four + One Cheese Lasagna ( LC don't have same cheeses as LFT) lol..... so I used an Italian Five Cheese Blend and Bam..... it was delicious! It did take some time (4hours) but OMG! It was worth every bite.... thanks Cajun Ninja!! Family said its a keeper...

    Only thing I add to this recipe is a trick from old Maw Maw! I like to use the 80/20 ground beef and take 5 or 6 tbsps of the grease to add to the sauce 😃 gives it a nice sheen!

    Hello ,dang what a fantastic lasagna.did you just use regular lasagna noodles ? Not no boil kind
    If so I have never tried that before looks like it worked well .Am guessing because of using a lot of that beautiful homemade sauce it cooked the noodles well .Thank you again and you have a lovely family....

    When u said the pasta had a bite, was that also saying to possibly boil first, just not as long, rather than starting with raw pasta?

      Cynthia Epps oh no, pasta for traditional Italian dishes will have some bite, but it’s not so much that the pasta seems undercooked. Trussme there’s a lot of liquid in that sauce. The lasagna noodles will soak it up. 😊👊🏻

    My mom taught me to line the bottom of my oven with aluminum foil...much easier clean up if you have a spill :-) Momma's ALWAYS right ....pi-yaaaaaaaaaaaaaaaaaaahhhhhhhhhhhh

      BloozeDaddy I just take some tongs and wet paper towels while it’s hot. Wipes up easily. 😊👊🏻
