A Michelin starred restaurant that doesn't cover every dish with a mountain of tweezer-placed flower pedals. I love it!
I like flowers on food, adds both flavor and makes it look beautiful if done right, but Søllerød is definitely more classical and sometimes that's all you want. :)

taking a wild guess here, but I know for fact that a 8-10 plate course like this in a 2 michelen restaurant(this is a 1 prices rise for every extra star) costs about 150 euros , so you could probably afford, the big deal is that due to their fanciness this restaraunts have crazy reservations and you would wait at least a couple of months to eat there
and you would be still hungry after those one bite plates
@@anlcagan8037 Actually no. First of all this is not the typical three small plates of food place. Second, the different kind of flavours these meals have will keep you full before you know it.

I would like to try something like that just once . I would never have the money for it but it would be a nice experience .Only thing I would say is that I like my Crepe Suzette flambeed at the table by the waiter . That is the way it should be done and nothing will change my mind on that .

I’m sure the food is absolutely stellar. I’m just a little surprised to see so many repeats of ingredients and techniques in one tasting menu. Not judging my any means, just making an observation
I see your point. But the menu is long and the chef has a signature look to many dishes. I also think we got an extra dish or two because they wanted to showcase everything.
Foodie Stories by Anders Husa yeah most chefs definitely have signature looks. That “skin” technique seems to be a signature for sure. Seems pretty original from all the restaurants I’ve worked at or seen. It kinda seems like one of the “wow” moments of the menu. That’s really the only repeat I was kinda surprised to see twice just cause it is so original. But the food looked and I’m sure tasted great. They definitely seem to have some of that modern Nordic quality made famous by chef redzepi but without looking like carbon copies. They definitely seem comfortable doing their own thing and that’s awesome. Also the service seemed really warm and personal even through the screen. If I’m ever in Copenhagen I’ll have to try and either eat there or maybe see if I can spend a day in the kitchen. Thanks for the great video
Your analysis is pretty spot on. Happy you could sense all that from the video. Søllerød Kro is a bit of a secret among foodies, at least considering how high the level is here. Since they are located a bit outside Copenhagen, and never got more than one star in the guide (they are way-way closer to two), they don't get the attention they might have gotten elsewhere. However, the restaurants host, Jan Restorff, is well-known for being one of the finest restaurant managers in the industry. He's worht the visit alone!
Foodie Stories by Anders Husa as someone who has worked in Michelin starred kitchens most of his career their food definitely seems worth two stars to me. Personally I almost like two star restaurants more from a working and a dining perspective. Sometimes three stars places can play with the food a little too much Because so much more is expected from them (certainly not defacing the value or the work they put in). I have no doubt that this restaurant will earn the stars they want.
I think Scandinavia has some fine three-stars now, but perhaps for the world that is true. Søllerød has deserved its 2nd star for quite some years now - it's as if the red guide doesn't bother to check the level.

No way my friend.. I had a dinner with my girl there and was about 220-250 Euro per person and about 180 euro for wine so if i remember well i had pay around 600-650 euro for me and my girl! Chill it’s not an average price restaurant

With regards to the production.. Are the restaurants open to you filming? I figure most everyone is taking photos but do you take extra steps when filming these videos?

I don't know for sure how they do it, but I imagine they make a super fine purée that they add agar to or something similar, that gives it the gel-consistency. Then pour onto a flat surface and heat?

You boil black olives in good quality apple juice. Then you blitz them to a pure with squid ink And spread it out on silicone mat. Let it dry over night, And let the pectin in the apples work.

Hi Jay. I'm happy to answer that! It is part prioritizes and part work. I don't spend money on much else in life. No car, no luxury clothes, no expensive house etc. Also, I've made food writing my job, and that helps with the traveling. Hope that helps explain how I can afford this with a regular job and income :)

with the prices in the Nordic countries I wonder how much does a person spends, and if so a average person gets to eat on the restaurant
Not sure I fully understood the question. Prices in the Nordics will be high for many visitors, depending on the currency, but as citizens we can afford meals like this.

Not sure they have steak! But there's a simpler 4-course menu. The menu is actually quite "safe." Nothing odd tasting or anything like that.

Why the portions are so small??
It's called a tasting menu, and it's a series of bites and smaller dishes, about 25 of them, that together makes up a complete meal.

Force feeding doesn't hurt the goose, they don't have the gag reflex and they are used to overeating to prepare for the winter. All animals suffer some, to some extent, as part of human farming. We can discuss that as an overall topic, but I don't think this is the forum. I believe in making it as painless as humanly possible for all animals, but I'm sorry to say that I am not a vegetarian.

Anyway I do not see the point of writing such justifications because it doesn't change the fact that the goose was force fed. At the same time, you are right about this is not a platform for debate. I just wanted to make my point across and we don't have to stretch this into a debate. Your life, your call but the only plea I have is that please don't try to paint it rosier than it is in reality.
Not trying to paint anything, but when a restaurant like Søllerød Kro takes care to work with specific farmers that treat their geese good, I think it's fair to point that out. Once again, the geese do not suffer from force-feeding and it's a natural part of their lives to overeat before winter. What's bad about foie gras production, and animal farming in general, however, is when the animals have horrible living conditions, like no space to move, or not getting treatment for injuries etc.
Once i asked a saudi arabian sheikh: what is your favourite meat? He said: rice and roasted chicken.....
Is your point that rich people can also enjoy a simple dish of rice and roasted chicken?

This is a set menu, you eat ALL of these dishes. You can't have 25 main course-size dishes. This is one of the meals I rememnber having to nap after because it's so much food.

Foam can be misused for sure, just like powder or sponge textures or anything really. I wouldn't say that Søllerød overdid anything that affected the meal negatively, though. :)

I am sorry if you don't like the music. I try to choose music that adds to the atmosphere of each place. Can't please everyone.
It amazes me how much people are willing to pay for such small portions, like I know that's supposed to taste good and I've tried it but I much rather enjoy a steak and shrimp burrito which also has an amazing taste. I make 6 figures so paying is not a problem but I don't need a guy licking my asshole while I eat the food he made.
If you enjoy steak, burrito and prefer to get your *ss licked outside a restaurant setting, that is totally understandable. I can assure you this is more than enough food for a grown man, though.
