How to cook Chinese spinach/Amaranth with three-colored eggs??

  • 三色蛋上湯莧菜,一道在馬來西亞非常普遍的佳餚!沒有很花俏的食材,是由皮蛋,鹹蛋還有鮮雞蛋一起煮的莧菜。這三種蛋配合一起煮,不但沒有味道的衝突,反而風味非常獨特,斑斕的色彩讓人胃口大開!
    苋菜是一种营养价值极高的蔬菜,特别是含有较多的铁、钙等矿物质,同时含有较多的胡萝卜素和维生素C。可是口感有一點點的粗糙,烹煮前必須把它的老梗去掉,再以慢火煮軟勾點芡汁,口感就會滑嫩一些!
    材料:
    莧菜~ 1把
    鹹蛋~ 1個
    皮蛋~ 1個
    雞蛋~ 1個
    薑片~ 適量
    蒜片~ 適量
    鹽巴~ 1茶匙
    生粉~ 適量
    Amaranth soup with three-colored eggs, a very common dish in Malaysia! We called it Chinese Spinach or Bayam in Malaysia! There are no fancy ingredients, it is amaranth boiled with preserved eggs, salted eggs and fresh eggs. These three kinds of eggs are cooked together, not only there is no conflict of taste, but the flavor is very unique, the colorful colors make the appetite!
    Amaranth is a vegetable with extremely high nutritional value, especially contains more iron, calcium and other minerals, and also contains more carotene and vitamin C. However, the taste is a little rough, you must remove its old stems before cooking, and then cook the soft juice with slow fire, the taste will be smooth and tender!
    Ingredient:
    Amaranth ~ 1
    Salted eggs ~ 1
    Preserved eggs ~ 1
    Fresh egg ~ 1
    Ginger slices ~ moderate
    Garlic slices ~ moderate
    Salt ~ 1 teaspoon
    Potato starch ~ moderate amount
