Without sounding vain, I am a very good cook ..... However, I recently started watching chef Aynsley Harriott's Caribbean program and I realised very quickly that I seriously want to tackle this cuisine ..... But I definitely need help!
I found a new Caribbean curry powder at Mark's & Spencer. Then not knowing ingredients, I purchased a block of creamed coconut, chicken thighs, onion, spinach, sweet potato, and bell peppers. If anyone knows of a good recipe or two, I would very much appreciate some guidance!

Could one add potatoes to absorb excess salt? How would that affect the authenticity?

certainly - but it would change the taste and texture of the recipe. That said, you could add a whole potato sliced in half and remove later on
