Mmap gaming I am your biggest fan but when you were finding the stronghold you was changing the it says game mode changed to survival so it means that you didn't end the game and you takes that diamond arm or from creative and all those things
I know this doesn't match what you are used to doing but I think you should try Ark Survival Evolved. I have pretty much quite playing Minecraft because Ark is so much fun. I think you would really enjoy it.
