THE BEST KEY LIME PIE I'VE EVER HAD: Recipe from The Fish House in Pensacola, Florida

  • On a recent trip to Pensacola, Florida, my husband and I ate at a restaurant called the Fish House..where we had the Best Key Lime Pie I've Ever Had!!! And it turns out, their recipe is on the internet. Naturally, I had to try it out when I got home. As you'll see in the video, it came out really good, although my meringue was slightly different because I didn't have the exact kind of sugar...and I put in one more egg white. Either way, it was delicious. Read on for the recipe. And if you want to know where to eat in Pensacola, I'll make a few recommendations below.
    Key Lime Pie
    (Pensacola's Fish House Recipe)
    Prep Time: 15 mins.
    Cook Time: 30 mins.
    Crust:
    1 1/2 cups of graham cracker crumbs
    5 Tbsp. of sugar
    1/3 of a cup of melted butter
    Pie Filling:
    1/2 cup fresh key lime juice
    1 (14oz.) can sweetened condensed milk
    4 eggs yolks at room temperature
    Meringue:
    3 egg whites,
    3/4 cup super fine sugar
    1/4 tsp. cream of tartar
    Preheat oven to 350º
    Crush graham crackers in food processor until you've got fine crumbs. (If you don't have a food processor, place them in a large ziplock bag and use a rolling pin to crush them.) Add sugar and melted butter. Combine all ingredients well and place in a 9" spring form pan or pie plate. Press down on bottom and along sides to form a pie shell. Bake for 10 minutes.
    Whisk together key lime juice, sweetened condensed milk and egg yolks. Pour into prepared crust and bake for 10 minutes.
    While pie is baking, place egg whites and cream of tartar in mixing bowl and use an electric hand mixer to beat them until soft peaks form. Gradually add in sugar a little at a time and continue beating on high until stiff peaks form.
    Remove pie from oven and carefully spread meringue on top of pie. Return to oven and bake an additional 10 minutes, or until meringue tips start to brown.
    Cool and chill in refrigerator a minimum of 2 hours before serving.

    I always have this instead of a birthday cake! I enjoy all the different versions of it too. So jelly that you have a tree!!! When I've had to use extra fine sugar in a recipe I'll run it through my coffee grinder or food processor ( that's how I make popcorn salt ) great recipe and nice Florida b- roll !

      That's GENIUS!!! I wish I would have known about your sugar trick! I'm sure it would have made a difference because, even though my meringue was good, it didn't quite turn out like the restaurant's. Thanks for the tip. And for the nice comment.

    Key lime pie-one of my favorite pies. I can’t wait to try it! Unfortunately, key limes in my area are not readily available, but maybe I’ll luck out this time. Thanks for sharing the recipe!

      Pensacola was so much fun. It's good to be home, though. I love my lime tree, too. It's not too big, which makes it even easier for me to reach and pluck all the limes. Lol Thanks for the nice comment.

    Thanks for this recipe. I’ve been getting together the things I need to make a key lime pie for my hubby. However, I am going to make a chocolate cookie crust, using the bare 1/2 of my favorite double stuff Oreos, of which I only eat the side with the filling! ☺️ I also need a springform pan. I live on the Olympic Peninsula in Washington State, so no lime trees of any kind here. And, at 75 with hands that are getting arthritis, I’d rather not have to juice all those lovely little key limes. But I was able to find a bottle of “genuine key lime” juice, and I’m hoping it will work as well. Thanks again!

    Marcy, Yes!!!! I am definitely going to make this keylime pie in the next week or so. It looks delicious. I have never tried my hand at this pie, but this one looks easy enough. Also, I never knew there was a difference in limes, and keylimes. Thank you so much for this information, and sharing this recipe!!

      I didn't know the difference either! And I have a tree! Lol I just thought my limes were small, but still very good. Then I researched it and found out I had key limes. Anyway, glad you liked the video. I appreciate you watching & commenting. Hope your pie turns out delicious.

      I am so thrilled to have one. For years, I thought it was a dud because it wouldn't give us any limes. Then last year, for the first time, it gave us a ton of limes..and it's been producing ever since. I squeeze fresh lime juice on everything now.

Even though the meringue on my pie was good, the consistency wasn't the same as the restaurant's. I think the extra egg white and not having "super fine" sugar may have made a difference. Either way, I loved it.☺️

    If I saw those fish tacos my eyes would pop out of my head as I stared quizzically at the server, as they're pretty different than what we see here in San Diego. The tortillas are corn, beer battered fried fish is topped with cabbage and cream sauce. No beans or anything like that. Were they any good? I've had fish tacos with flour tortilla in Birmingham, Alabama, and they weren't bad. But I'm still skeptical. :)
    The pie reminds me of Pay de Carlota. mmm that's super easy to make

      I prefer tacos made with corn tortillas, but I still really enjoyed the fish tacos I had there. I've never had pay de Carlota. If you have a recipe you'd like me to try, send it to me. I'd love to try it.
