I am so glad I found your way of making sourdough starter with no waste (what a breathe of fresh air). I disliked discarding and was the reason I didn't continue with the sourdough baking. I have begun a starter and its looking good so far. I speak good things to it as you've suggested :). I will give your recipes a "Go"! Thank you for your good example in the kitchen - Love it!

I haven't tried using those. If you are letting your bread rise in a proofing basket, I recommend baking it in a cast iron combo cooker. The initial steam ensures a good oven spring. Then you’ll want to remove the lid for a nice crispy crust.

My starter looked similar to yours and is well established! I refrigerated the dough for 24 hours in all that time it only rose approx 25%😦. Please tell me what I should do? My instinct is to put it in a warm place and see if it will rise!

I love your English muffin recipe. But I have a question, how do you stop the muffins from shrinking after you cut the circles. They act like pizza doughy when it won’t stay rolled out. Do you have any suggestions on how to stop them? Thanks Anja I love watching your videos I always learn something new.

What is that stand you have your starter sitting on? Does it keep it warm? I’m on my second try making starter. Our house is keep so cool and my starter does not ferment🥴 does that stand keep yours warm so it can ferment? I am so frustrated-

I followed your instructions to the olive oil bread to the letter! My starter looked similar to yours and is well established! Yes, the type of flour will affect the rise and taste. I used regular AP flour ~ Anja

Do you have an oven? If so, you can turn it on low for a little then turn it off and stick your dough in there to ferment.
