Tip from a Flemish guy: you can also add some dark chocolate to make the sauce even richer. And also ‘peperkoek’, a bit like gingerbread, with mustard 😋
i'm affraid you did forget the bread and mustard though then again you can do whatever you like with this dish, some like to use different meats, different beers, different spices, it's really quite open, as long as the basics stay.

My dad uses pork meat and adds some other ingredients like coca cola, beer and chocolate and HOLY **** i've traveled to many places, but nothing can compete with it.
It is my understanding that bacon is not in the original recipe. Flour and butter are also optional. The beer is what enriches the flavor so a dark ale is recommendable. Just try to make it without those optional items so the recipe is a bit healthier. It can also be made in a dutch oven.
Almost. This is surely delicious. I can see. But this is NOT a Flemish stew. The specific ingredients to the tastes and seazoning what makes it a flemish stew are completely absent. You need cinnemon, cloves, nutmeg, bread with Dijon type mustard (not the sweet mustard). The taste you want is a perfect balance between that gingerbread taste, hearty and sweet and bitter. That's what makes it "Carbonade Flamende" (french for Flemish Stew. Flemish from Flanders which is in Belgium).

We always put in a couple of slices of bread with Dijon mustard on them into the pot before simmering it. Brings thickness and acidity to the stew.
