I love New Bern's bbq and my Uncle has a bbq restaurant in Farmville for at least 30 years. He makes the best coleslaw and hush puppies I've ever eaten.

I’m from eastern NC and it wasn’t until I traveled to other states that I realized people refer to barbecue as anything cooked on a grill. Where I’m from, barbecue is ONLY chopped and seasoned pork (or turkey). If something is cooked on a grill, we don’t call it barbecue..it’s grilled (whatever it is).
Coming from a brisket-loving Texan here -- that looks GOOD! Especially the way its served with cornbread & slaw. I'd definitely ask for skin in it. I'm drooling 🤤 Great job!
I grew up in NC and now live in TX - it IS good. Skylight is some of the best Q I've ever had.
This is BBQ heaven and whoever wrote about Lexington BBQ is also spot on. We here in NC respect the friendly debate on East vs West. Let me tell you, it's all good. The Jones family, the Monks, the Stameys, the Bridges, all these families have created a BBQ legacy in this great state. Great video and a great family represented here. I live in the western part of the state and going to Ayden in on my BBQ bucket list.
One of my uncles married a Setzer gal years ago near Cherryville. They live in Granite Falls . Wonder if you're related.

I moved to Greensboro NC about a year ago...never been here but I just asked some of my coworkers if they wanted to do a little road trip to Ayden this Saturday - we are gonna eat some hog this weekend!!!

As soon as I heard them speak I knew they were in eastern NC. I love fire department fall BBQ fundraisers. You will get some of the absolute best BBQ you have ever tasted.
Been in Eastern NC all my life, and you won't find better "real" bbq anywhere else in the world.

I ate at the Skylight Inn, in early 2019, and it was excellent. I highly recommend making a trip to eat there. If I lived closer by to it, I would probably eat there at least once a week.

When I visit relatives in Lexington NC, one of the highlights is having, almost daily, barbecue. It might be the addition of vinegar in the sandwich which is very piquant and cuts the richness of the pork. It makes for one helluva sandwich. Yessir, best pork barbecue ever!
I admit, I didn't really like it. The BBQ out there is chopped up to the texture of a tuna sandwich and it's just not my thing as I like feeling the texture of the meat. I made the flight from the west coast to Charlotte three times (followed by the drive to Lexington) to try to see if I just wasn't "getting" it, but I didn't care for it. I did like the women in Lexington though.
A pig pickin' might be more up your alley, then.
A whole hog is cooked just as it appears in the video, only the pitmaster lays it out. Guests line up and pull the meat from the bone. Sauce is optional if you're not into vinegar.
I'd recommend picking from the cheek, the belly, or the right along the back.
Lexington style is the sort of food you feed to prisoners.

"Chimley"? Bless his heart. I've been a subscriber to National Geographic for over 50 years now and never saw a section covering the culinary arts. This was more of an infomercial than a short story about BBQ.

Raised in Kansas, now live in east NC. I miss sweet beef bq and NC pork bq is on the other end of greatness. Both are great foods made by the best. Anything tastes good when you are hungry and it's even better when someone else cooks it.
I love Texas BBQ, but nothing beats a pulled pork sandwich from eastern North Carolina.

I grew up eating alabama hickory bbq and still think its the best, but there is no doubt that NC bbq is definitely awesome.
I grew up in Eastern NC. Theres no place like home.
Were I was born and raised we have lots of Mexican food restaurant. Now I've discovered some of the best damn Mexican food comes from the place that doesn't look to appealing.
So if you're selling BBQ from a shack and a really nice place across the street. I'm going to that shack first.

8:08 Marinate in salt over night and that makes the skin crisp -- not soft and soggy! 9:08 slow cooked over night shovels full of coals in the pit.

Clark's bbq in Kernersville, NC is my favorite. Lexington bbq is the best.
I grew up in Thomasville and have had every kind of BBQ in that area - Skylight crushes all of them.
Clark’s is awesome ! … and the bbq coleslaw can not be topped.
Edit: When we go to the beach, though, we stop at Skylight and take a pound with us.
I don't eat meat any more. But I do remember as a kid going to Skylight. And I would say its the best BBQ. I used to get a Chop BBQ Sandwich. Hands down its the best.

Being born and raised in the Charlotte area i am more partial to the red slaw. It just goes so well with the smokiness of the pork.

Let me try and put this argument of best BBQ to rest. Simply there is no best. I've had great BBQ from many restaurants with people who own the restaurant and do competition. Most are good few stand out. Now on the other side I've had great BBQ from people who don't own a restaurant or do competition. Yet are better. You can't put a label on the best because there is always someone who does it better and they don't put that out there. I like to think the best is always around the corner. No matter where or who! You'll always be surprised if you keep looking.

Whole hog is the only way we do it in eastern north carolina if you want great bbq keep it simple and let the flavor speck for its self.

It cuts through the fatty richness of the pork and combined with the salt and smoke it gives a full flavor. It just ain’t the same without it!

Running the places and being the face of these places are one thing and actually being the pit master are another thing. The guys behind the scenes. Those old Pit Master guys should be the highest paid people in those businesses....but I'm sure they've not had raises in years.
