The first public sale of Whole Hog BBQ took place in Ayden, North Carolina, in the 1930's. 184 years later, Sam Jones is carrying on the family tradition of cooking Whole Hog BBQ as the 7th Generation pitmaster of his family's BBQ restaurant, The Skylight Inn. Since 1947, The Skylight Inn has become an icon in the BBQ world for selling one thing and one thing only: chopped Eastern Style North Carolina Whole Hog Pork--served on a bun or in a tray with corn bread. As Sam Jones says, when the customers arrive at Skylight Inn, "they've already made the decision of what they're gonna be eating for lunch, it's just a matter of how much of it they're gonna have."

I live about 30 mins from Ayden. I have family there, as a matter of fact in the first few seconds of the video, on the bottom right corner behind all of those business there’s a neighborhood, that’s where they live. This bring me so much pride..
Having grown up as a kid in Eastern N Carolina, and eaten at the Sky Light Inn many many times...... watching this and not having any is a terrible form of torture. It is the best bbq. And my mouth is watering. God bless the Skylight Inn.
If you are not from the South, it will be hard for you to understand how real this is. We love your BBQ and its places like this still doing it the right way that carry on our food traditions. I may have to drive on over to Ayden today for lunch.

Nah, each region has it's thing like the coal fired ovens in NYC for Pizza. In my area it's hot dogs & cheesesteaks and one place reigns supreme just like Skylight does in NC. We all get it.
I'm not even from the States and this spoke to me but maybe it's because I grew up in a small town like this.
This is still, and will probably always be, my favorite Munchies video. The family, the dedication, the love for barbeque. I hope to visit one day. All love from BC, Canada.

This is one of the best features Munchies has ever put out, I'd really like to see more of stuff like this. And I'm not saying that because I don't like a lot of your other stuff or something, this is just particularly good.
Wow, love this episode. I'm a bar and restaurant owner from New York that has owned a vacation house in New Bern, NC for 13 years . Every visit to the house over the years has included a trip to the Skylight. I'm retiring to NC in July 2019. I'm sure a weekly visit for a Bbq fix will be on my agenda thereafter. Keep the tradition alive!
As an archaeologist/anthropologist-foodie... I have to say, this vid warms my heart... and makes me hungry! The culture of BBQ is to be respected and enjoyed!
The pride these guys take in this is inspiring. Nothing wrong with being proud of where you come from. This place is on my bucket list, someday I'll make the trip down from Michigan, someday.

i don't know why but i got emotional watching this video. it's fantastic and the whole thing about he's the 7th generation to continue this is just amazing. one day, i will leave nyc to take a trip down to Ayden, NC to eat at this spot
towlebucket I really want to visit from Canada, I think I will too. I absolutely love the culture. There will always be people who give you grief in life, but you have to remember that there are 7 billion people in the world and not to let that one person bring you down :)
+towlebucket Nobody wants to be a hillbilly, but everybody wants the barbecue and the moonshine. Appalachia is also the only place in the country that I'm aware of that isn't even trusted to properly pronounce its own name, as people come in from all over and "correct" the locals.
As a worker: We now have 2 locations, one coming on the way. We still have Skylight, but Sam opened his own exclusive BBQ restaurant in Winterville, NC. Sam Jones BBQ. And we're opening another Sam Jones in the capital, Raleigh. Feel free to come by @Munchies. By the way, I'm a Dishwasher/Chopper here in Sam Jones. Tyler Lackey. And I can say, Chopping the quarters is a pain because we have to be fast, and consistent to debone and defat the BBQ by hand.
That's good to know, because Raleigh is a hell of a lot closer to me than Ayden.

I'm 57 years old now remember the best times was around all the year when it was time to put a hog up and the smokehouse and my grandmother working those hams up you cannot find that to this day It's good to hear these people talk😎

I'm from North Carolina. This place is the best, period. And Eastern North Carolina bbq is the best barbecue, period. I like Texas barbecue just fine, and I think it's gotten more famous internationally. But Eastern NC whole hog is what you need. Something you can't recreate at home. Hell, the best places aren't even in real cities in NC--they're in hog country. And every real North Carolinian will travel for it.
To the people talking rude about what age this gentleman looks, his wife being so gorgeous, etc., people in NC would raise their eyebrows at y'all's rudeness...this is a hard working, funny man. And that's sexy.

Fantastic piece here. I had the pleasure of driving out of the way (Ayden isn't the most convenient place to get to) to make my pilgrimage to the Skylight Inn. This piece here does a great job of conveying the essence of Jones' Barbecue.

Had a chance to try your cooking in late 2019. One of the pit masters let me check out the behind the scenes and we talked about the differences between Carolina, Kansas, Texas and Chicago style Q as they pulled a hog off the fire and chopped it up.

I'm English and I have to say for how young a country America is they have some of the best food in the world. I'm sure years ago here in England we used to cook that way but it's been lost I hope that one day I can come over and eat here
My summer vacations weren't complete with out a trip to "Pete Jones BBQ" aka "The Skylight Inn". This place is an Eastern Carolina BBQ Staple. Thanks for this mini documentary!
Preach! Legendary bbq amoungst an ocean of places nationwide. Every region has its greats and this is one of them. Truly a top priority for anybody, including myself, that wants to experience true American BBQ.

In 2019 he's lost about 70 pounds since this video was shot (I live in North Carolina and asked him myself). He looks a lot leaner now than he did in this video.

One dishwasher on my job got some of the BBQ Sauce for his birthday and shared it. I've been eating Open Pit sauce most of my life, and Skylight has the best BBQ sauce I've ever had.

North Carolina spicy vinegar sauce is my favorite of all BBQ sauces.
It's pretty damn good, I like the mustard stuff too. I never even heard of either until I moved to Virginia (I grew up south of New Orleans).

It's called dry aging, due to over exposure from heat and smoke. But it gives distinct taste to the meat..... LOL...
Good old days of hard working and being satisfied with what you make. These old ways are being lost and cant be lost. These people have my full admiration as one of the young ones being a 20 year old.

Went there this Saturday. Amazing bbq. Bruce Jones was busing tables and cleaning dishes. Mike was chopping bbq and eating it lol.
Sam's the same way if he's at his own restaurant. Guy's been featured in every form of media, travels the country constantly, but he's still right in the trenches cleaning tables.
I used to get BBQ there when I was at ECU. Best, hands down.

White people age poorly. He probably also has a poor diet consisting of very little veggies. I love meat, but you've also got to consume greens.
Heat and smoke is good for meat, but bad for your skin. He might not age well from all that hard work, but it's also doubtful he'll ever have to look hard for a good night's sleep.
It's also highly doubtful that he has, or has had, a "diet consisting of very little veggies". Appalachia has historically always been a fairly poor place and meat has, for the biggest part of its history, been a luxury that they typically couldn't afford. And if they could, they could only afford to add in small amounts like salt pork in soup beans, or enough chicken to make chicken and dumplings.
This is in Ayden, NC. For sure not Appalachia. Eastern NC is swampy lowlands, and about 6 to 7 hours from the mountains.There's plenty of vegetables here anyway. This was mostly farm land.
