That does look excellent, very nice! I bet you could get some round magnets that are thin and slightly bendable even from Home Depot to cover those holes so that you do not have to put the bars into the PBC.
I came across this recipe looking for a good Smoked Stuffed Chicken recipe and this looks pretty down home to me. The only thing I plan to do different is mix up a roux for the chicken drippings to make a gravy.

Don't have a PBC, but from reading the bars are supposed to be used to maintain even air flow -- for the "set it and forget" cooking.
