Thanks for this recipe, I’ve made it twice now. The first time I used it as a caramel sauce & the 2nd time I wanted it firmer so I used mascarpone instead of double cream, it turned out great, much firmer & it was used to make keto millionaire slices.
@@randomguy2078 You could definitely use a sweetener with stevia (Erythritol-based, and stevia is used for more sweetness as Erythritol is only 70% as sweet as sugar). Do not use liquid stevia - that would not work. Such caramel won't be as smooth though, it will be a bit gritty. Allulose or Tagatose are the only options I know to produce smooth results.
Martina Slajerova - KetoDiet I’m in Canada. It’s not approved for sale here. I can find it online but it’s expensive. Are there any other sweeteners that would work the same?
@@Cathy.C. I just spotted it on Amazon.ca -- must be a new addition, as I have periodically checked to see if they'd get it. Unfortunately, a 400g bag costs $36! That's three times as much as an equivalent amount of Swerve :-(

Maybe i missed it, but what is your burner set on? Medium? High? # on the dial? I've done a reciped similar to this with the same ingredients, and it is easy to burn the caramel.

Hi Edith, you can do that but it will be a bit grainy. It's fine when hot/warm but once it cools down, it will crystalise. There are a few tips on how to minimise the crystallisation without allulose here: ketodietapp.com/Blog/lchf/keto-and-paleo-caramel-sauce
Bocha Sweet is something else but that will work too! Carolyn Ketchum has a recipe with Bocha Sweet - I have it and tried it but only because I got a pack when I was in the US. Not available in the UK for now.

You won't be able to use powdered pure stevia or monk fruit as that won't work.
I tried this recipy with xylitol Omg it's a disaster, even if I am great cooker, I repeated the recipy two times it's disgusting, the oil of the butter was o' the surface after cooling down, not a creamy texture, I get out the oily part and try to add some warm water a little bit and try to mix.... Not si creamy as a caramel should be... I am disappointed

I store mine in the fridge. It will last for about weeks if stored in a sealed jar. Yes, you can microwave it on low to make it runny before serving.

Well yea, you have to use allulose. This recipe will not work with xylitol.
Yes, I'm afraid that's because you used Xylitol. It's not my recipe, it's due to the substitution. Xylitol is not a good alternative.
