Croissant Bread Pudding

  • Years ago we travelled to Cairo where Lisa had what she considers the best bread pudding she’s ever had. This recipe is her version of that bread pudding made with croissants, custard, nuts, and dried fruit. We hope you enjoy!
    Ingredients:
    Custard
    200ml / 13.5T cream
    700ml / 3 C whole milk
    4 large egg yolks
    45ml / 3 T corn starch
    100g / 3.5 oz sugar
    5ml / 1 tsp vanilla
    2.5ml / 1/2 tsp cinnamon
    2.5ml / 1/2 tsp nutmeg
    Bread Pudding
    6 croissants
    236ml / 1 C chopped toasted pecans
    71ml / 1/3 C dried cranberries
    71ml / 1/3 C golden raisins
    butter for baking dish
    8x8x2 baking dish
