    What's the difference between pre-infusion and using the paddle to manually lower the pressure to ZERO bars? Is there a mechanical difference? And if you turn the paddle all the way to the left, do you shut off the water flow as well?

      It’s possible to vary the flow manually until you close it completely. The pre-set pre-infusion works with the pump and the solenoid valve. The Paddle offers the possibility to vary during the extraction. The pre-set pre-infusion works at the very beginning of the extraction phase.

      @@LELIT_Official Does the pre-set pre-infusion worked on non-plumbable setup or only if it's plumbed into the water line as with most machines?

    Hello, my new V3 Bianco arrived yesterday. Great! Quick question, if I may. When the programmed pre-infusion finishes at 8 secs, does the pressure then automatically ramp up because the paddle is completely to the right side? Then, the user is responsible for ending the extraction time? Is that correct? This much

    Did I hear that correctly? There is no preinfusion chamber in the Bianca? So the classic 4 bar preinfusion of the E61 is not present?

      @Illu M. You are correct.. the classic 4 bar preinfusion of an E61 is not present in the Bianca, however once familiar with the Bianca you can use the flow control valve to set at your desired bar during the preinfusion time frame. Personally I'm not a fan of the automatic programmed preinfusion as demonstrated in this video with the flow control valve fully opened. When performed as demonstrated the puck is hit with water at its maximum flow rate during the initial 3 seconds of preinfusion which could conceivably disrupt the puck and lead to channeling. Instead I set the paddle to a reduced position during the initial 3 second preinfusion sequence, then when the pump shuts off for the resting phase I open the paddle fully. Just FYI: To many unfamiliar with the Bianca the paddle "appears" to be a pressure adjustment which is not the case, the paddle actually only controls water flow rate to the puck. The actual operating bar (i.e, pump pressure) is made by via a physical adjustment on the pump assembly. With this in mind, if a puck is fully saturated, a reduced water flow rate allows whatever water is being introduced to the grouphead enough space and time for it to pass through the puck, whereas if the paddle is moved to its maximum opened position the increase in water volume in the grouphead is more than the puck can quickly pass so the backup of water causes the pressure at the puck to increase. NET: Reducing or increasing the water flow at the grouphead in-turn reduces and/or increases pressure at the puck.

      @@eltonnoway7864 One thing you're missing is the Bianca V3 has got a low flow start/end setting that reduces flow to a lower level (i think about half of the regular flow) for a variable time at the beginning of the brew and again from a set time onwards until you shut it off with the lever.
      This makes it even possible to dial in slayer style shots where you only need to stop it at the right time.

    Looks like the pressure smacks up to 11BAR in a hurry. Can that be limited?

    during the pre infusion the paddle must be open at max? how important is the pre infusion and rest time and why should I change the pre infusion time by changing the type of coffee? Thanks

      Yes, because then it would fight each other. You can use either automatic pre-infusion using LCC as shown on the video or you can turn off automatic pre-infusion in LCC and do manual pre-infusion by playing around with the paddle - e.g. to simulate what they shown with automatic pre-infusion you just pull the lever on for 3 seconds, vessel fully open, then after 3 seconds you completely close the flow by turning the paddle all way to the left, wait 5 seconds and then fully open again. Simple as that. With manual pre-infusion you have more to play with ;)

      @@misenko856 Although, I'd recommend not simulating the bianca's 'pre-infusion' with the paddle. Turning on the pump, then turning it off for a time isn't really preinfusion. In fact, it's pretty bad for the puck as the sudden high pressure will potentially damage the puck, then turning it off to soak the puck... will do nothing. What you want to do is keep pressure low, around 2 or 3 bar for the first 7 to 10 seconds. Then gradually turn up to 9 bar. You can even wait till you see the first drips come through before jumping to 9 bar. That's how real pre-infusion with a lever machine is meant to work.
      Turning a pump on and off is honestly a gimmick, which should only be used if you don't want to stand by the machine. If you're using the paddle anyway, I don't see the point of the 'pre-infusion' setting in the bianca.

      @@Drift-yf4rn Yep video isn't so great lol I think with any E61 group machine you can do a trick where you can kinda pre infuse by running the pump and then you can stop the pump and let off on the pressure by moving the brew lever half way point, I didn't think it would disrupt the coffee bed unless you go all the way down where it relieves the pressure and goes PSSCCH.
      If it's plumbed in, on some machines with the brew lever half way you'll get whatever the line pressure is, 2-4 bars I Think is normal range for most places, and that's actually a good pre infusion pressure, so in that case you wouldn't even need to run the pump at the start.
