Clarification - the demo starts at 24:25. Context is important to many people. I wouldn't expect someone to learn to drive a car by watching someone else without teaching them some of the fundamentals first.
Based on a quick test I did, it appears the actions run before the scripts. I made a string field hidden with the action and in the script, I put content in to the field. I never saw the field get populated which means it was hidden by the action before it got populated by the script.
Adding images is available several places. You could add an image field to a standard UI form, you can add images to Service Portal widgets with HTML. I would need to dig deeper to find out what the options are (outside reporting) for the native mobile apps.
