    Kokam and jaggery is never added and masale bhaat is incomplete without sajuk tup.. your recipes are very tasty i m your big fan

    Masale Bhat is looking yummy. But I have never heard or seen addition of Kokum in it. Also addition of one very important item you escaped. On the ready Masale Bhat while serving the same, melted pure Ghee is spread on the top. That enhances the taste tremendously. If you have had Maharastrian पंगतीतले जेवण any time you must have noticed that पानात (ताटात) मसाले भात वाढल्यावर त्यावर लगेचच तुपाची पात्तळ धार सोडतात.

    Ty for uploading your sasural ka cuisine. Great effort. Adding amsul, vaangi, garam masala is something we don’t do. Kala/goda masala anyway contains garam masala, so separate garam masala is not needed. Yes the rice is never gooey, but it is very soft, it is much softer than any biryani/pulao texture. A squeeze of lime and ghee is what we would eat it with, not amsul. The amsul we would add to an aamti. But as an amsul lover, this sounds like a nice new version.

    Love your recipes Smita but have to disagree with you on your Maharashtrian Masale Bhaat. No true Maharashtrian ever adds kokum or Jaggery to it. Maybe a pinch of sugar, yes. Also, true Masale Bhaat is normally made with just one type of vegetable ….. at the most, two. Never with mixture of 4-5 vegetables. And you forgot the most important ingredient that gives Maharashtrian Masale Bhaat its aroma and flavor …… toop! Or Ghee! In fact, most Masale Bhaats use toop / ghee in the phodnee or tempering itself! With Maybe a touch of oil. The unique Maharashtrian flavor is only gotten from toop/ghee. And lots and lots of grated coconut and coriander leaves.

      we do and I know many who do. There is no masale bhat without kokam and jaggery. The sweet and sour taste balances the masala flavor. But yeah, its subjective. If kokum is not available, we add aamchur.

      For Sour taste we use lemon juice that to after it is served in a plate.. It is an individual's choice of lemon...besides this, we use liquid form vegetable of अळू (पातळ भाजी) while eating masale bhat. This vegetable is little sour since tamrind is added in bhaji while making it..of course roop/ghee is must while relishing on this Masale Bhat.​@@csd25x7

      We too do not add anything sweet or sour. Our means authentic CKP masale bhat has only tondli, hirwe watane, kaju and batate in it, with coconut milk and talala masala of fried onions, ginger garlic khaskhas, til plus green chillies. Garnish is of course fresh coconut and coriander

    Awesome recipe, adding kokum and jaggery was new idea will surely give it a try, humble request could you please share the recipe of raw jackfruit biryani, pls show the authentic one which you make with nonveg, coz many make like masale bhaat and call it biryani. 🙏😍👌

    Thanks to share this interesting version of Masala cha bhat.. nam maneyalli, coconut based masale use maadtivi with some spices & redchilli added to it . Kokum badalu tomotoes use maadtivi. other exlusions- thondekayi matte badanekaayi.

    I agree with the second last commentator that in Masale Bhat
    there are never so many vegetables in it like Pulav. Yours is actually a fusion of Pulao n Chinese rice as far as vegetables added are concerned. In authentic Masale Bhat there is either Tondli or Wangi, mostly Wangi. Also Ghee is in "phodni" in addition to oil apart from as a topping as well. Thank God you did not add Kadhi patta like South Indian style which is now a days put in every dish including non-veg.

      No. This is traditionally also made for prasadacha taat aka food offered to the Gods on special occasions. Also, the rice has enough flavors without those ingredients. It’s satvik with toop/ghee added.

    So true. Kokum is never put, toop is essential and vange ??? May b some put but primarily it’s to tondli n green peas or tondli cawliflower n peas

      No actually in Maharashtra many put vange in rice, it is called "Vaangi Bhat". It tastes absolutely great. Try it once.

    1. Instead of kokum should add tarmerind pulp
    2. Sugar instead of jaggery. Rice dishes are better with sugar. Jaggery slows down cooking.
    3. Boiling hot water should be added to such rice items always , not cold or room temp water.
    Overall a good and easy recipe !
    In absence of goda masala : red chilli powder, coriander powder, jaiphal grated , ginger powder should be good enough to give required flavour.

    हिला काय मसाले भात बनवता येणार. मराठी डिश आहे ही. कोकम कोणत्याही भातात घालत नाहीत. काहीही करते आहे ही. हा कोकम पुलाव भात झाला. मसाले भातात मसालाच नाहीये.

    One important thing is the thick burthan you use and the metal matters..in aluminium vessels the desired taste and texture may not come..

    मसाले भात करताना उकळते पाणी घालतात तांदूळ आणि भाज्या मधे. तुम्ही दोन्ही वेळेला गार पाणी घातलेत. आणि मसाले भाताचा मसाला वेगळा तयार करतात.

    साजूक तूप नाही तर मसाले भात पूर्ण झाला असं वाटतं नाही...
    काजू /शेंगा हव्या होत्या... आणखी मस्त लागला असता..

    Looking very beautiful.but maharashtrian style we make some special masala for masalebhat.and not add kokam lemon sajuk tup ola naral and kothimbir .and we add some specific subjis

    विदर्भात आलू वाटाणे शेंगदाणे खडे मसाले लसूण अदरक हिरवी मिरची आणि काळा मसाला घालून बनवतात मसाले भात.
    वांगेभात तोंडलीभात
    कोबीभात हे काही घरगुती प्रकार आहेत मसाले भाताचे.
    आणि मसालेभात,आमसूल कढी , डाळीची दह्यातील चटणी जिलबी असा बेत असतो.
