VEG Pandra Rassa with Kolhapuri Pulav | Step by Step Recipe | Chef Smita Deo

  • VEG PANDRA RASSA WITH KOLHAPURI PULAV
    INGREDIENTS:
    1 cup Masoor dal
    Water
    Salt to taste
    2 sliced onions
    2 tbsp oil
    1 cup of dry coconut
    1 cup of fresh grated coconut
    4 tbsp of ghee
    2 1” cinnamon
    1 star anise
    5 green cardamom
    6 cloves
    200 peppercorns
    2 bay leaves
    1 onion sliced
    1 onion finely chopped
    2 tsp of ginger paste
    2 tsp of garlic paste
    1/2 tsp of turmeric powder
    1/2 tsp of chilli powder
    7-8 green chillies
    1 tbsp of kanda lasun masala
    2 cups of rice (ambe mohar rice)
    1/4 cup of freshly chopped coriander
    1/2 cup of cashew nuts
    1 tsp of soaked khus-khus (poppy seeds)
    2 tbsp of ghee
    METHOD:
    Soak Masoor dal for 8 hours & let it sprout
    Heat a vessel, add masoor dal in it, add water and some salt to taste
    For Kolhapuri Pulav
    Masala Preperation
    Take 2 sliced onions and dry roast them
    After the onions dehydrate, add 2 tbsp oil
    Saute the onion for another 2-3 minutes
    After 2 minutes add 1 cup of dry coconut that’s dry roasted
    Roast it till they are golden brown in colour
    Shut the flame
    Cool it down
    Grind it into a coarse paste using very little water
    Heat 2 tbsp of ghee
    Add whole spices- 1” cinamons
    1 star anise
    3 green cardamom
    3 cloves
    10 peppercorns
    2 bay leaves
    Add 1 onion sliced
    Sauté the onion till they are soft and translucent
    Add 1 tsp of ginger paste
    1 tsp of garlic paste
    Mix it well
    Add 1/2 tsp of turmeric powder
    1/2 tsp of chilli powder
    Add 2-3 green chillies
    Add 1 tbsp of kanda lasun masala
    Saute it well
    Add 2 cups of rice (ambe mohar rice, soaked for 30 minutes after washing it well)
    Mix it well
    Add onion-coconut vatap
    Mix it well
    Add 4 cups of water (use masoor dal stock)
    Add 1/4 cup of freshly chopped coriander
    Mix it well
    Add salt to taste
    Give it a final stir
    Cover and cook it on a medium to low flame till the rice is done
    For Pandhra Rassa
    For paste
    Take 1/2 cup of cashew nuts
    Add 1 tsp of soaked khush-khush
    1 cup of freshly grated coconut
    Grind it into a fine paste
    Heat 2 tbsp of ghee
    Add whole spices- 1” cinnamon
    2 green cardamoms
    3 cloves
    10 peppercorns
    Add 1 onion finely chopped
    Cook till it is transparent and soft
    Add 1 tsp of garlic paste
    1 tsp of ginger paste
    4-5 green chillies
    Sauté it for another minute
    Add the boiled masoor
    Add coconut-cashew nut paste
    Add 1 lt of water
    Mix it well
    Add salt to taste
    Give it a good mix
    Let it cook, do not cover it
    For plating,
    Assemble the rice in the plate in a ring form
    Garnish with carrot, cucumber, fried onions
    Add the pandhra rassa in the centre
    Serve

    I still struggle in cooking I just worship people who know how to cook .it is the most important skill . Cooking with good ingredients not relying on adulterated, outside food
