How To Make Summer Roast Beef Sandwich - Recipe

  • The combination of roast beef and pickled vegetables, along with a sour cream sauce, makes for a refreshing summer sandwich.
    INGREDIENTS
    SAUCE
    1/3 cup sour cream
    2 tbsp mayonnaise
    1 tbsp Dijon mustard
    SANDWICH
    1 large ciabatta bun, cut in half horizontally
    10 oz (280g) sliced roast beef
    1 jar pickled asparagus (optional: pickled red bell peppers)
    DIRECTIONS
    1. Blend together the sauce ingredients.
    2. Spread the sauce on each half of the bun. Pile roast beef on one half. Arrange pickled vegetables on other half.
    3. Assemble.

    Those pickled red bell peppers would be great with that roast beef too, just like those pickled asparagus. Another good no cook meal! 👍🥪

    Ah, another great sandwich. I never thought about adding pickled asparagus or peppers....looks great! Wasabi for sure. I will also add some Kirkland brand sharp cheddar cheese.....(and a thinner bread....or muffin! LOL!) Thanks much, Kevin

      It has a very mild flavour. A touch of vinegar and mild asparagus.
