What a great comment. I'm disillusioned with the Food Channel and the whole Diners, Drive Ins and Dives thing. When the host has $800.00 hair, it's time they went back to real food. Kent and Shannon are real people, cooking for regular folks. I know I can make their recipes and they'll turn out great. Looks like about 2 million people agree with you and me - it'll be 3 million before long.
Never once have I thought you were pokin' fun at any of these businesses. They feed the masses and you feed family and cattlemen! Btw: I LOVE Arby's Beef and Cheddar with their Arby's Sauce! Yours looks even better, but I don't think I could open my mouth wide enough to grab a bite. :)

I still use a couple of teaspoons of Colmans Mustard Powder in with the Flour when I make a Cheese Sauce, I find in helps to bring out the flavour of the Cheese and adds a nice level of heat. But then our Cheddar over here in England is yellow and I find Paprika colours the Sauce.

If you love to cook... This is the stuff to try...!!! Being an impatient bachelor, I can cut corners and still beat Arby’s. But I can’t beat Kent...!!! I use pepper jack cheese under the meat and sharp cheddar on top, kinda like a double grilled cheese with meat in the middle, using Russian Salad Dressing for the sauce... ALL my friends absolutely love them...!!!

The red sauce served on the sandwich is red ranch. Ken you added their bbq sauce to it. The regular size is 3 z meat. Yes I worked there a life time ago

There's no red ranch on the beef n cheddar I have been a manager for 16 years

This is why i love kent. There's a certain tx raised culinary influencer that just keeps being disrespectful to these fast food companies but some people just dont know what comes before the fall, kent understands that god exalts and gives grace to the humble

Honey is so often overlooked as an ingredient. Glad to see it here!
One thing I use it in is honey sriracha chicken quesadillas. You put the honey on the tortilla before adding the cheese and chicken, and when it gets hot it drips out into the pan and crispens all around the tortilla.
The beef n cheddar usually has what they call a "Red Ranch Sauce" (it's basically like a sweet n sour jelly almost) on it, which I quite like.. I prefer it to the Arby's sauce.
Anything Kent fixes up it's a very good meal that'll stay

I have been mixing liquid smoke with water in a spray bottle for years. It adds the flavor without overwhelming or having one tiny spot that tastes like bottled liquid smoke lol

I worked for Arby's for my first job, from age 15-18. The bun is buttered and toasted on the inside only but the toaster they use doesn't crisp it up much. The meat comes as a beef paste in a big plastic bag. In the morning we would take it from the bag and wrap it in foil and then in plastic and bake until proper temp. It's comes out looking like a giant baked potato. There's no Arby's sauce on a beef-n-cheddar unless you add it after the fact, the sauce is Catalina dressing.
Don't get me wrong, even after the three years being behind the scenes at Arby's I'll still eat anything on the menu there.
Some bonus Arby's trivia; the name Arby's=RB's=Roast Beef's. The corporate side of the company is Sybra corp, which is Arby's backward. They own several other fast food chains but I don't remember which ones. Who would have thought 20+ years later I would right an essay length RUclips comment about the place lol.

Here in California, they tend to put plenty of the Arby's sauce on it, but I add a packet of the horsey sauce, I love a nice horseradish bite with my roast beef.
They used to sell it by the bottle. I don't know if not enough people bought it or too many people bought it, but now we're stuck with those stinkin' li'l packets. Good stuff, though. I definitely love me some Horsey Sauce! 🤤

Absolutely agree with you about the Arby's sauce. It has a lot of vinegar. I wish they offered a packet of the sauce that they put on the beef and cheddar. Less vinegar, and a little sweetness.
You can ask for a cup of that on the side. It's called red-ranch. I worked there. I preferred it to the Arby's sauce as well.

Thank you for this. So many RUclips channels have people putting down fast-food makers, pretending to gag when tasting something, and all sorts of other cheap pokes. And then you try their recipe, and the original is way better. Lends quite a bit more credence when someone acknowledges that there's something good out there, they just want to make it their way. It's not about better, it's about being inspired. If it's better, great. If not, you can be happy with just being different. That humility goes a long way. Love the channel.

I really dig the remake thing. My wife and I used to go around sear for the best of something then remake it better based on the trates we liked from all of them. The things I remembered liking from the arbys sandwich was that Kaiser roll, melted cheese with the sliced beef but the finisher was the horseradish sauce. Good game Kent 🐸🍺🔪🔥

The honey is a brilliant idea. It acts on meat the same way pineapple does. It's a natural tenderizer. I revers sear my steaks with a coat of honey with my seasoning and wrap in aluminum foil at a low 250F in the oven until it reaches an internal of 129F then with a ready skillet on the stove I sear it and the internal will rise to 135F by the time the sear is done. Then while it rests I chop an onion into half crescent moon slices right on top of the left over fond in the searing skillet and poor on top of the steak and man does that honey coat make that steak so tender!🤤

Many people think the Arby's sauce in the packets is the same as in the sandwich, but if you taste the inside sauce you'll notice it's sweeter and has no vinegar sting!

Looks like I am busting out the crock pot this weekend for Canadian Thanksgiving! Thanks for yet another great recipe Kent. Last time i had Arbys was in Saskatoon, Saskatchewan in 2009! Thats a 30 hour drive to the left from where i live now in Ontario.

I love the roast beef and cheddar My favorite part of theirs thought is the red ranch sauce, I'd put that red ranch sauce on just about anything and the horsey sauce mixed with ketchup to dip my fries in.
