My apartment is about a three minute walk from Mr. Beef (the filming location and inspiration for The Beef), and they have a provolone option for their Italian beef. It’s my go-to!

@@archivist_of_dragonstoneyou can't go wrong with the Italian beef. The only thing you have to decide is how wet you want the bread. You definitely don't want to order it "dry" because all the flavor is in the gravy. Ordering it dipped means they dunk the entire roll into gravy. The best option (in my opinion) is somewhere in the middle.
You can also get some of the gravy on the side so you can dip each bite as you go
Personally I prefer swiss
nobody should ever apologize for adding cheese to a meat sandwich, that's like apologizing for putting sugar in your lemonade

Yep, provolone is absolutely acceptable on a beef sandwich. I also prefer sport peppers over giardiniera.
Yes, mozzarella or provolone on an Italian beef is absolutely allowed. But I also need mine baptized.

The beef and cheddar crossaint dipped at Portillos is the Chicago beef sandwich over Al's for me all day long!

Provolone is acceptable subspecies of beef, as is mozzarella toasted in the pizza oven on top of garlic bread.

Finally! I’ve been waiting for what feels like years for a classic style Babish with a dish being recreated from a show or a movie. I know it’s hard to get inspiration these days, but the Bear has produced a number of dishes that I’m sure will provide more ideas for episodes like this.
Born and raised in Chicago and I can tell you, this is a beautiful Italian beef. It’s always best to be eaten with cheese, hot, and sweet peppers. Great job man.
$130 for eight six-inch roast beef sandwiches that you have to make yourself? with stale bread and overcooked meat in loose ziplock bags?? what????
i don't care if their italian beef is number one. that's completely unacceptable.
A form of resting on your laurels, to be sure. That's ridiculous. 16 dollars for a portion of overcooked meat on bread is already a dealbreaker.
It’s about $16.25 per sandwich, which isn’t too extreme for a popular restaurant. Even some fast food items are around the same price, albeit for quite a bit more food
Also, for bread, try Turano.
Turano bread trucks are pretty iconic in Chicago and their French rolls are what a lot of places use.
I don’t believe that Turano distributes far outside of Chicago, also that stuff from Al’s does appear to be (now stale) Turano rolls
You can get your beef in three options: Dry, dipped, and wet. Dipped is basically they rapidly dip each end in the jus. Wet is they put the whole sandwich in so the bread soaks up all the liquid. Dipped is the way to go.

I just tried a beef sandwich for the first time and I think I’m gonna disrespect the culture because I would have preferred mine dry with the jus on the side instead of wet.

Chicagoan here - that looks legit! I am particular to them being dipped but that's not for everyone! Everything about this looks amazing and I'd love to try it.

We love our pizza and ketchup free hotdogs but for my money Italian Beef and specifically the combo(Italian Sausage and Beef in the same sandwich) is the true Chicago food.

Lifelong Chicagoan - you taught me how to make my favorite dish..beef bourguignon. I don’t mind the cheese or using chuck roast. Au jus looks amazing, as does the giardiniera. 10/10…no Chicagoans going to hate on that sandwich.

In a local restaurant in our hometown, the Italian restaurant uses steamed green bell peppers instead of giardiniera. Delish.

As someone who recently went to Chicago and had the pleasure of visiting Mr. Beef, I am excited to try this recipe. It was a sandwich that I was afraid wouldn’t live up to the hype but I was pleasantly surprised when it was just as delicious as I imagined it would be.

Italian beef sandwich never looked appetizing to me but after this video I want one now more than anything I've ever wanted except the 1979 Kenner Millennium Falcon.
This gives me traditional babish vibes. Definitely recommend wet though I definitely get your texture preference!
The sweet option got left out. You have the option of having cooked sweet peppers instead of or with the giardiniera (sweet or sweet and hot instead of hot).
There are places that do include cheese as an option. I personally don't order it, but others must. Also, if you truly have no respect for yourself, you can get a combo which is an Italian beef with an added Italian sausage in the sandwich.
Red sauce is also an option in many places but may be more a south side thing I'm learning today. 😂

Im a chicago area native, and you absolutely improved it at the end. I’d probably take the cheese off though lol. But big cities think it’s sacrilegious to change up their food eventhough sometimes it ends up better 🤷🏻♂️
Many Chicago beef joints have a cheese option. I think with Italian beef, a lot of options are acceptable with Chicagoans. :)

If anyone wants to kick that up a level just turn the roll into a nice toasted garlic bread before putting the beef on. (I do not recommend cutting through the entire roll for 2 separate pieces.)

It does not have to be sliced thin at all, boiling tenderizes where I come from! When boiling do not overcook, that makes it tougher! The oven Roast looks awesome, exactly what I would do!

Fun fact I used to work for Portillo's!!! We boil the beef meat in the bags they come in and do others things before putting everything on the sammiches
We had an Al's Italian Beef open up locally in the college down town area but sadly after about a year it closed down which was a darn shame. It was an amazing sandwich but I suppose there is no accounting for taste because it's been gone for 6 years (probably forever!) So this just may help me cease to be sad and sandwichless in the south

Cheese is optional at most Chicago Beef places but it really does improve the sammich.

@@troll-fx2zc To be fair, I have darkened the doorways of many Italian beef joints in Chicago and Chicagoland. Cheese is a frequent option. Usually provolone or Mozzarella. Traditional? No. Atypical, also no. It's a normal option. Locations that include cheese of note: Mr. Beef, Portillo's, Luke's Italian Beef, Jimmie's, etc etc etc.

this is my favorite sandwich ever and I always get at least two every time I visit Chicago, about once a year. Al's is alright, but Johnnie's and Mr. Beef are both way better imo. Hot, sweet, and dipped is the best way to order one (Mr. Beef actually calls that variety a 'Bear' now) but I haven't tried cheese yet! Looked fire.
Cheese is a popular option at many places. As is green pepper and red sauce. :)
I also highly recommend Pop's and the *best in town, Tony's Italian Beef on Pulaski. Both fantastic.
My ideal italian beef?
Skip the giardineara and go with "sweet peppers" aka sauteed or sometimes grilled green pepper. Cheese on italian beef? Yes, Mozzarella not White American. Marinara? No. I do perfer my sandwhich dipped over a baptism of broth, but both are valid.
If you really wanna go extra, most places that serve italian beef will offer a combo option that puts a whole italian sausage in there too.
I didn't get the chance to see The Bear until FX's recent "first one's free" preview. So basically I associate Matty and Italian Beef to that Doordash (or whatever) commercial.
