I received my fermenting kit from y'all last month and fermented my first time a few weeks ago. I decided to use some of my green blaze green beans fresh from the garden and made fermented dilly beans. They were delicious!

9A here. I 'm with Ms. Sheila. I just pulled up my pole beans (bugs), squash (heat), and cucumbers (they were just done). I amended by beds and threw in pollinators to enjoy until I am ready to plant my fall stuff. I started eggplant last night and will start tomatoes and peppers soon. Everything else will be direct sow. I am growing 12 hossinator tomatoes. I LOVE them. We got off to rocky start but they are doing great now. I have a tomato with salt and pepper for lunch every day. Besides what we have eaten, half have gone in the freezer for later and the rest are getting freeze dried. Also, if you haven't freeze dried halved cherry tomatoes, try it. Such a great, crispy snack and they are great on salads.
The Old Goat is holding the beater. We do lots of canning. Tomato sauce, T. Juice, Broths, Beaf Roast Cubed left over in the freezer, Potatoes, Sweet Potatoes and Green Beans-206qts last yr. This makes me want a Freeze Dryer even more. Thank You for all your videos!
The only thing I have fermented is cabbage and cucumbers but after seeing the carrots I think I am going to do that, we have a freeze dryer too, and love it, have not tried figs but that is now on my list, the old goat is at the beaters!

When I took the master gardeners classes, they were at our extension office at the courthouse. Our teacher said they find knives often where men leave them in the bushes and forget them after they get their tags, license, etc. lol. Life in the south. My husband carries at least two. We ate our first tomato for supper tonight with green beans, potatoes, cornbread, and corn beef hash. Yum! 🍅 your hair looks good fixed like that Sheila. Lots of preservation going on here too.

I haven't ever fermented anything as I don't yet have the necessary crock/lids but I would love to get into it. Red onions, beets, pickles, cabbage, eggs, .... the possibilities are endless. Can't wait to get started. Wish I had a freeze dryer too
Have been freezing, freeze drying and even trying waterbath canning now with our abundance of tomatoes. Feeling grateful. See the old goat on the shelf withe the USA cutout and standing behind the hand mixer. I fermented / made sauerkraut this past season for the first time. Plan to try fermenting jerusalem artichokes when i harvest those. Wish me luck. 😆
What an excellent episode! Mama Hoss, that tomato powder is also great to add to your homemade taco seasoning. I learned that from That 1870's Homestead. Fun fact... You can grow every ingredient needed for good homemade taco seasoning and with that freeze dryer you can have it done in a jiffy.
I sit here for 2 hours every morning in the dark mostly, and watch and rewatch you guys videos. I have planted my Phacelia behind the corn and going to try and get the Buckwheat out today behind the peas, winter squash a.n.d..... m.a.y.b.e I might cut okra one more time and take it down. Those plants are getting on over 7 foot tall. All that Kodiak Mustard did a great job last year on the nematodes, even though we had that bad freeze and I lost most of it. I didn't even get to plow it in because of that shoulder replacement. I have one request. Would you guys make another video on sweet corn with any new verities? I am trying to pick out what I want to plant this fall and I see there was a new one I hadn't noticed last year. I am not fighting the heat and bugs this summer again. I'm letting the cover crops do their job, and its gonna be all corn in the fall. Thanks you guys. Always enjoy ya'll.
The Old Goat is on the 3rd shelf up behind Sheila hanging around what looks like an egg beater. I like to make Kimchi! Pickles are what I would like to do this year since I have had a bumper crop of cucumbers. I have a tomato jungle growing but tomatoes are just starting to ripen. I can't wait to do my tomato taste tests with all the Hoss varieties I planted. I got a little carried away with my tomatoes! Thanks for all the great growing advice!

Up here in Minnesota, loads of green tomatoes, pole beans are climbing, mustard greens (my first time growing) are done, kohlrabi is growing and some tiny seedling eaten by cutworms (I think?)... Ol' Goat behind Sheila by the old hand mixer!
Great show guys. Mama Hoss, you sure have been busy! I would love to be able to successfully ferment cherry tomatoes. Failed miserably last year. Old goat is behind Sheila on the shelf with the egg beaters.
So glad to see Pappa Hoss is over his weather downer from last week. It's ok, it happens to us all. As to the guard removing the pocket knife, they have to because a child might find it. The old goat is going "old school" this week. He's found an old timey egg beater to show off to the group this week (on the top shelf behind Mama Hoss). I've still have my grandmothers egg beater with a red handle! For the Monterey drawing - I've never tried fermenting to preserve our harvest. I'm still surprised at the difference between us in zone 8A and Hoss Tools in 8b. That April and early May cold weather slowed a lot of our plantings so we are behind South GA even more than normal. Our tomatoes are just starting to hit their peek (the determinate ones), Peppers are starting to be ready and our bush beans and butter peas are making progress. We just pulled the last of the english pea vines, the squash, some of the cukes (one variety of slicing cukes is still going strong for us though). Our spring pumpkin experiment is about ready to harvest and I'll have time for a 2nd planting for the fall (small variety called "Orange Smoothie" for our 4 year old grandson - 7 nice pumpkins to harvest soon). Our 2nd part of the spring potatoes are going to be ready to pull next week and the sweet potatoes are doing great. I hate seeing a vacant spot in the garden so I'm pondering my options to fill those spots up (our main raised bed garden is only 240 sq ft total with some wicking tubs and grow bags on platforms). Oh, I almost forgot the corn is coming along great - yes you can grow corn in a small garden plot. I'm going to check out that chart for how much to plant which Mama Hoss talked about. Sounds like a great tool to use for planning. Greg, you need to check out the new Mission cap. As much as I also like the bucket hat style like you have, I bought one of the caps the other day and it's pretty neat too!

I tried fermenting cabbage & carrots but it grew this fluffy cottony mold on it, so I composted it & haven't attempted again yet. But I really would like to try a sweet ferment of gherkin pickling cucumbers😋!!! Loved eating them as a child. Thanks for the 🌽 y jokes last week.

Hopefully this fall crop will be good as well! We can a lot of salsa and incorporate tomatillos. Then sometimes an abundance of tomatillos and yes Salsa Verde. We have three freezers that are usually full. We have never had an electrical outage that lasted more than a couple of hours. Should such happen we also have a generator. Still scratching my head and how does one get botulism from honey??? We have an excellent dehydrator and use it often. We follow another channel and they also love their Harvest Right and we have looked into possibly purchasing one. Then we are trying to justify the cost? Trust me a bit of effort but we make all of our own ketchup and BBQ sauce. Darn worth the effort. OK and I promise not to respond next week as to much screen ink used in this reply! Oh and by the way the Old Goat is stirring things up as usual over Mama Hosses shoulder on the second shelf!
Thanks for the input. Botulism spores can be found in honey; when swallowed, the spores release a toxin. Infants' systems are too immature to prevent this toxin from developing.

Shelia, make sure you freeze dry some fresh corn. SO GOOD!!! Old goat is on Shelia's side behind the hand mixer. I fermented some sauerkraut and it ended up way to salty (I followed the recipe). Want to try that again.
My favorite ferment is salsa. The old goat is behind the egg beaters. I have lots of cherry tomatoes, will try fermenting some of them. Have been dehydrating them to turn into a powder. Wishing I had a freeze dryer to preserve more of the nutrients.
I think the old goat is hanging out on the top shelf behind Mama Hoss close to the USA sign. I'm going to try fermenting this year...I think. I haven't worked my nerve up yet lol. But when I do decide to do it, I want to do pickles.
I freeze mostly to hold vegetables until I have enough to do a canner load, like when you first start harvesting. I especially like to freeze tomatoes as they come off. I wash, core, and squeeze the seeds out and separate paste from the other tomatoes. When thawed the skin slips right off the tomato. Dehydrating the skins, and processing the tomatoes is quicker. The goat is on top of the old egg beater! Great job to night!

A friend of mine lost a whole freezer of creamed 🌽 corn by stacking it warm. It soured before it froze. Glad you advised about that. Lots of work gone. 😢
I have the same canning book as you showed. I was going to try and can some of our string beans we grew this year. By the time in read the information in the book, I was so confused and discouraged that I just said forget it! All I have is the big blue enamel canning pot. Can I cook the beans then process them in the canning pot? I did make pickles and spicey dilly beans which turned out great, just would really like to do some of our veggies. Mama hoss......use a big nesco cooker. I used roma tomatoes....halfed. Cook for 2-3 hrs. I spooned off the extra juice. When done removing most of the juice. I placed in my vitamix blender.....ran until tomatoes chopped up ....into a sauce. Then pour into a pan ....heat and can. Very simple and quick

I've done canning, some fermenting, but not much. I want to do more cabbage/sauerkraut. I freeze peas and corn by vacuum sealing. We got a FDryer and doing zucchini in it so far and powdered beet greens. Old Goat behind Sheila by the hand mixer 😊
Home is where your heart is and the old goat. Beautiful harvest saved for future use. I can meats. I was nervous at first. But talk about makings a meal in a jiffy! I can make a pot of chilies in no time: canned red and pinto beans, canned hamburger meat, canned successes, dehydrated hot peppers. Make beef stew or chicken stew in no time; just open a jar of beef stew meat or chicken and keep on opening jars until you have what you like in a beef stew. Easy and in no time at all. I prefer to can my meats than freeze them. It is so satisfying to see how all your hard work pays off. Especially when you are sick and your family needs meals. They can fix their own or it is so easy even if you feel ill, to prepare something for your young ones. I wish I had a freeze dryer. I would have my relatives and friends take turns at freeze drying their produce. I think preserving your food is so important. Oh, I've never made that cowboy candy. I have to try it. I have so many halapenos I don't know what to do with. I can't say enough of how please I am with my peppers and tomatoes from your plat starts. Thanks.
We ferment sauerkraut every year. I have tried other things but I’m having a problem with the sourness and saltiness. Haven’t gotten use to it yet. I’m going to keep trying though.

I've never done any ferments but I would like to try it. I did make apple cider vinegar this past winter and it turned out great.
How long did it take I was going to do it but it seemed like a lot of effort for very little

Shelia, make sure you freeze dry some fresh corn. SO GOOD!!! Old goat is on Shelia's side behind the hand mixer. I fermented some sauerkraut and it ended up way to salty (I followed the recipe). Want to try that again.

My favorite ferment is salsa. The old goat is behind the egg beaters. I have lots of cherry tomatoes, will try fermenting some of them. Have been dehydrating them to turn into a powder. Wishing I had a freeze dryer to preserve more of the nutrients.

I freeze mostly to hold vegetables until I have enough to do a canner load, like when you first start harvesting. I especially like to freeze tomatoes as they come off. I wash, core, and squeeze the seeds out and separate paste from the other tomatoes. When thawed the skin slips right off the tomato. Dehydrating the skins, and processing the tomatoes is quicker. The goat is on top of the old egg beater! Great job to night!

A friend of mine lost a whole freezer of creamed 🌽 corn by stacking it warm. It soured before it froze. Glad you advised about that. Lots of work gone. 😢

I have the same canning book as you showed. I was going to try and can some of our string beans we grew this year. By the time in read the information in the book, I was so confused and discouraged that I just said forget it! All I have is the big blue enamel canning pot. Can I cook the beans then process them in the canning pot? I did make pickles and spicey dilly beans which turned out great, just would really like to do some of our veggies. Green beans need to be done in a pressure canner to get to the recommend temp to kill bacteria. They are not acidic and need to be pressure canned.
I love fermenting pickles, with squash or cucumbers, but I have a recipe for the cherry tomatoes and can't wait to see how they turn out.

Mama hoss......use a big nesco cooker. I used roma tomatoes....halfed. Cook for 2-3 hrs. I spooned off the extra juice. When done removing most of the juice. I placed in my vitamix blender.....ran until tomatoes chopped up ....into a sauce. Then pour into a pan ....heat and can. Very simple and quick

I've done canning, some fermenting, but not much. I want to do more cabbage/sauerkraut. I freeze peas and corn by vacuum sealing. We got a FDryer and doing zucchini in it so far and powdered beet greens. Old Goat behind Sheila by the hand mixer 😊

Home is where your heart is and the old goat. Beautiful harvest saved for future use. I can meats. I was nervous at first. But talk about makings a meal in a jiffy! I can make a pot of chilies in no time: canned red and pinto beans, canned hamburger meat, canned successes, dehydrated hot peppers. Make beef stew or chicken stew in no time; just open a jar of beef stew meat or chicken and keep on opening jars until you have what you like in a beef stew. Easy and in no time at all. I prefer to can my meats than freeze them. It is so satisfying to see how all your hard work pays off. Especially when you are sick and your family needs meals. They can fix their own or it is so easy even if you feel ill, to prepare something for your young ones. I wish I had a freeze dryer. I would have my relatives and friends take turns at freeze drying their produce. I think preserving your food is so important. Oh, I've never made that cowboy candy. I have to try it. I have so many halapenos I don't know what to do with. I can't say enough of how please I am with my peppers and tomatoes from your plat starts. Thanks.

We ferment sauerkraut every year. I have tried other things but I’m having a problem with the sourness and saltiness. Haven’t gotten use to it yet. I’m going to keep trying though.
My favorite ferment is a pepper blend for hot sauce. Home fermented hot sauce beats the brakes off of store bought.
My answer for the question would be Brussels Sprouts. I saw a recipe a while back about pickling them and it sounds delicious
