I don't understand how to find the centre (yay) Like, I understand how the top parts match up to find the co ordinates, but the bottom two corners I don't understand
The (-8,3) describes the centre of enlargement. If you re-watch the part of the video about enlargements it shows you how to find the centre of enlargement. The -8 in this case refers to -8 on the x-axis. Hope this helps!
you're not just supposed to understand your lesson by watching a 5 minute video, you should watch it then solve and if you're confused, watch it again and complete trying until you get the correct information

What about a reduction? You should edit Enlargement to Dilation. Dilations enlarge or reduce an image based on the scale factor being > or < than 1
Subtraction is the same as negative addition
