The coleslaw is actually dressed with apple cider vinegar which is refreshingly different from the typical mayo drenched variety. Pro tip from a Texan: make a pulled pork sandwich with the white bread, top with sauce, and slaw. Most of us Texans are anti-sauce with good bbq but I personally love saucing my bbq to balance the fattiness of the meat.

You don't speak for all Texans, No we all won't wait in line for hours for food. I have literally never waited in a line like that for food, and never will.
I've had Franklin's, it was not the best I have ever had.
I'm convinced the people claiming it is the best ever, is the only way to rationalize to themselves it has to be the "best ever" after waiting for a ridiculously long time to eat it, your brain tries to make sense of it, when it makes no sense. Franklin's is a tourist trap BBQ place, I've eaten at plenty others that are better.

The pizza in New Haven, CT is amazing, if not some of the best in the U.S (friendly-ish [Lol] rivals with New York City) New England style lobster rolls and clam chowder (cream broth based, also Rhode Island style which is clear broth, and Manhattan style which is tomato broth based), You've tried a bit of New Orleans (there's just SO much to try there, it's only the tip of the iceberg) I went there 5 years ago this weekend with my best friend who'd passed in November of '19. He lived in Chicago which is another amazing food city. We'd planned another trip to New Orleans, but we didn't make it. Just more reason for you to treat every day as if it were your last. Sorry, I didn't mean to get on that depressing tangent. Follow your passions, and eat well. Calories are temporary, memories are permanent. (Just made that up in my melancholy state. I like it. The sausage game in Texas is strong due to many of the early settlers were German immigrants BTW taking some of that pulled pork putting it on a slice of the white bread adding some sauce and topping it with coleslaw is a great bite. When your next in Texas and need a snack idea go to local grocery or butcher get a summer sausage, long horn cheddar and a bucket of shiner long necks. Slice up the summer sausage and long horn cheddar sit back and enjoy, the perfect it's too damned hot to cook meal in my world. :)

Thanks for the recommendation of Burnt bean, we will add it to the list for next time. Both Terry Black's and Franklin's have their own unique flavors and styles, so it really comes down to personal preference! We would not be upset with a portion of either! but We loved the Beef Rib at Terry Blacks and the brisket was great at Franklins. There was little to no wait at Terry Blacks on the day we visited but a 3 hour wait at Franklins! So the question would be would we wait 3 hours again??? Probably not.
